🍅 Tomato, Kale & Feta Brekkie Pizza 🍕
Serves 4 | Ready in 50 mins
Start your day with this fresh, wholesome twist on pizza, packed with protein, greens, and a hit of tangy feta. Perfect for a lazy weekend brekkie or brunch with mates.
You’ll need:
-6 eggs
-¼ cup unsweetened almond milk
-1 cup kale leaves, chopped
-Sea salt & cracked black pepper, to taste
-¼ cup feta cheese, crumbled
-1 tomato, sliced into rounds
-1½ tsp coconut oil
How to make it:
1️⃣ Preheat oven to 180°C. In a large bowl, whisk eggs, almond milk, kale, and feta until well combined.
2️⃣ Lightly grease a cast-iron pan or oven-safe dish with coconut oil, pour in the egg mix, and top with tomato slices. Season with salt and pepper.
3️⃣ Bake for 40 mins until set. Slice with a pizza cutter and serve with extra kale and tomato on the side.
💡 Tip: Makes a great post-workout meal or quick grab-and-go brekkie for the week.
