Strawberry Coconut Oatmeal Muffins â¨đ§
Wholesome, lightly sweet, and perfect for breakfast or snacks. These muffins are filled with oats, coconut, and fresh strawberries, simple, nourishing, and satisfying.

Ingredients
⢠1 3/4 cups full-fat coconut milk
⢠Maple syrup
⢠Vanilla extract
⢠Ground flax seed
⢠Rolled oats
⢠Unsweetened shredded coconut
⢠Baking powder
⢠Fresh strawberries, chopped
Directions
1ď¸âŁPreheat oven to 190°C (375°F) and line a muffin pan.
2ď¸âŁMix coconut milk, maple syrup, vanilla, and flax. Let sit for 5 minutes.
3ď¸âŁIn another bowl, combine oats, coconut, and baking powder. Add the wet mixture and fold in strawberries.
4ď¸âŁDivide into muffin cups and bake for 24â28 minutes, until golden and firm. Let cool before serving.
Notes & swaps
