Strawberry Coconut Oatmeal Muffins ✨🧁

Wholesome, lightly sweet, and perfect for breakfast or snacks. These muffins are filled with oats, coconut, and fresh strawberries, simple, nourishing, and satisfying.

Servings: 12
Time: 40 mins

Ingredients
• 1 3/4 cups full-fat coconut milk
• Maple syrup
• Vanilla extract
• Ground flax seed
• Rolled oats
• Unsweetened shredded coconut
• Baking powder
• Fresh strawberries, chopped

Directions
1️⃣Preheat oven to 190°C (375°F) and line a muffin pan.
2️⃣Mix coconut milk, maple syrup, vanilla, and flax. Let sit for 5 minutes.
3️⃣In another bowl, combine oats, coconut, and baking powder. Add the wet mixture and fold in strawberries.
4️⃣Divide into muffin cups and bake for 24–28 minutes, until golden and firm. Let cool before serving.

Notes & swaps
✨Store in the fridge for up to 3 days or freeze for a month.
✨Add cinnamon or a pinch of salt for extra flavour.
✨Swap strawberries for blueberries or raspberries.
✨Use honey or agave instead of maple syrup.

Baked Broccoli & Feta Egg Cups

✨ Easy, tasty, and perfect for a healthy brekkie or snack!

Serves: 2
Time: 40 mins

Ingredients

-1 ½ tsp coconut oil (for greasing)

-2 cups broccoli florets

-3 eggs

-2 tbsp unsweetened almond milk

-Sea salt & black pepper, to taste

-Pinch of nutmeg (optional)

-⅓ cup crumbled feta cheese

Method

1. Preheat oven to 180°C (350°F). Grease two ramekins with coconut oil.

2. Bring a pot of water to the boil and cook broccoli until just tender and bright green (around 5 mins). Drain, pat dry, and chop finely.

3 In a bowl, whisk eggs, almond milk, salt, pepper, and nutmeg. Stir through broccoli and feta.

4. Divide mixture between ramekins (leave a little space at the top for rising). Place on a baking tray.

5. Bake for 30 mins or until golden and set.

6. Enjoy warm straight from the oven, or let cool and keep in the fridge for a quick grab-and-go snack!
