Starving. Home. Less than 5 min and lunch is done! So much bang in this salad!
My go-to nutrient powerhouse salad.
Brown lentils for protein and fibre, beetroot for antioxidants and so much more, and baby spinach for iron, folate and so much extra, Mount Zero organic Kalamata olives + pinch of Celtic salt. This is your vegan and lent version.
Sometimes I add Bulgarian feta for extra deliciousness and if you want the extra tang.
