Holy Week 🌿 Day 2 easy filling high protein ideas for you! With or without the rice!!!!

Another quick and easy lunch idea: vegetable stir-fry 🍜
With chickpeas & edamame for a simple plant protein boost 💪

One of the best things? Having frozen vegetables on hand ❄️
Even when the fridge is almost empty, you can still throw together a nourishing, colourful meal in minutes.

Simple sauce: sweet chilli + oyster sauce + garlic + soy 🔥

Looking for a simple, nourishing salad this Lent week? This is the ONE!

Roast some pumpkin, then toss it together with a tin of red kidney beans, chickpeas, sliced red onion, capsicum, baby spinach and a generous drizzle of balsamic. That’s it. Literally just throw together!

So of course we want to go out. We want to enjoy it. And in Melbourne, that’s what we do—our culture *is* eating out. It’s food, it’s connection, it’s experience. We don’t give that up.

Starving. Home. Less than 5 min and lunch is done! So much bang in this salad!

My go-to nutrient powerhouse salad.
Brown lentils for protein and fibre, beetroot for antioxidants and so much more, and baby spinach for iron, folate and so much extra, Mount Zero organic Kalamata olives + pinch of Celtic salt. This is your vegan and lent version.

Sometimes I add Bulgarian feta for extra deliciousness and if you want the extra tang.

What a fabulous week at an inspiring nutrition conference here in beautiful New Zealand 🇳🇿✨

Grateful to have been part of engaging conversations around the future of nutrition, shared evidence-based insights, and connected with passionate colleagues who are truly making a difference. The energy was incredible thoughtful discussions, innovative ideas, and plenty of laughter along the way!

Conferences like this remind me why I love working in nutrition: bringing science to life, building meaningful collaborations, and having fun while doing it.

One of my biggest methods for training and staying committed is booking myself into something. Something meaningful. Whether it’s a marathon, a half marathon, a walk, Hyrox, or whatever that looks like for you.

Committing to an event means showing up consistently. You *have* to train, and that keeps me motivated. It gives the training purpose.

I also love doing it with friends. I’ve always tried to sign up with someone because training together makes it so much more enjoyable for the body, the mind, and overall health. Everything feels better when you’re not doing it alone.

So come along with me on this journey. Find your marathon. Find your “one.”

For me, it all started 12 years ago… and this year, it’s the Queensland 42km marathon for me together with my friend and the person this adventure started with 💙🏃‍♀️✨
