Nut Butter; almonds, walnuts, pecans & macadamia nuts
I activate and then dehydrate all the organic nuts and seeds that I buy. Then it was simple to roast off 3 cups of nuts, you choose what you like and then blend. I added a little salt and some linseeds once the butter became creamy

Making your own means you are saving on packaging and you know there are no additives

Nuts are a great source of good fat and are low carb. They are also a great source of omega 3, especially walnuts, making them good for heart health

You don’t need to eat toast to have nut butter, just eat a spoonful at that 3pm slump hour and you’ll boost your energy or dip celery or carrot sticks into it. Nuts have so many health benefits

Sunday brunch
This easy tofu scramble gives you protein, fibre and fats

200g tofu
1 tablespoon nutritional yeast
1 teaspoon tumeric
1/2 teaspoon praprika
Zucchini slices
Spring onions
Mushrooms
Spinach
Avocado
🥑
Mash up tofu but ensure to leave a few lumps, mix up yeast, tumeric, praprika with a bit of salt & pepper in small amount of almond or coconut milk and add tofu.

In a pan out a small amount of olive oil and toss mushrooms, zucchini and spring onions, once cooked add tofu and spinach
🥑
Serve with slices of avocado

When you can’t get to your favourite Mexican Restaurant for fish tacos, due to lockdown.....just make them

I love these corn tortillas, that are Australian made with all Aussie ingredients and are gluten free

Marinate your fish in;
Olive oil - 2 tablespoons
Lime juice - 1/2 lime
Fresh chopped red chilli
1/2 teaspoon cumin
1/2 teaspoon cayenne peppper
and salt and pepper

While that’s marinating make your coleslaw
🌮
Shred purple cabbage
2 tablespoons fresh coriander
1/2 red onion finely chopped
2 tablespoons of lime juice
1/2 cup corn kernels
1 jalapeño minced
1/2 cup mayonnaise
2 teaspoons honey
🌮
Warm the oven and wrap tortillas in baking paper and then foil place in oven to warm
🌮
Place fish in hot pan and cook on each side for 4 mins if thin, or as required until cooked
🌮
Serve fish in warm tortillas, topped with coleslaw mix, sour cream and avocado

You can really put whatever you like in your coleslaw, just adjust it to suit your taste

This meal provides you with many essential nutrients and makes for a great Friday night in with a movie

With just a few ingredient, pumpkin, almond meal, eggs, olive oil, baking powder, salt & nutmeg, this makes a great side to a bowl of soup or just as a snack and provides so much nutrition

After an hour morning walk in the sun I came home and made an old time favourite for brunch

I always feel like I’m cheating when I eat these but they are gluten free and good for you

1 banana mashed
1 egg beaten up and mixed with banana
100g Almond meal
1 dessert spoon of chia seeds
1/4 teaspoon of GF baking powder
1/2 teaspoon cinnamon
Handful of Blueberries if you wish

Mix it all together, drizzle olive oil in pan and cook on a low heat slowly, turning once

I topped mine with quark for extra protein and more blueberries, raspberries and a drizzle of maple syrup.......decadently healthy

I’m roasting cauliflower, broccoli, red onion, parsnip, sweet potato and Brussels sprouts and serving it up on a little quinoa drizzled with a tahini dressing, with lemon juice and garlic

With cauliflower in season, I roasted a whole one and tossed in some other vego that were in need of eating; sweet potato, zucchini, some garlic and a large leek all blended into a chicken stock base. Use veg stock if you’re vegetarian

Soup is not only a hearty meal it’s a great way to boost your fibre intake. One bowl of soup may mean you are getting 3 serves of veg for the day before you’ve even got to dinner
