One of the things I love most about my thermie is the ability to adapt recipes to suit the ingredients you have access to!
I’m in PNG visiting hubby and store bought granola works out to around $20-40 a bag (yes, the ones we pay around $6 for at home). I had brought a heap of nuts with me as they are expensive here and hubby had this incredible rich dark coffee flower honey in the cupboard so I used that instead of maple. Dried berries were more than a bag of granola and wouldn’t have done well with the strong flavour of the honey so I used dried figs instead. Using walnuts, Brazil nuts and pecans made this granola far better than any I have ever bought. Will go perfect with the Greek yoghurt I made last night for breakfasts for the week!
