A Night to Remember in Saigon ✨
If you ever find yourself in Vietnam, do yourself a favour and join a local night walking food tour — it’s not just a meal, it’s an experience of life, culture, and connection.
Last night, we wandered through the vibrant backstreets of Saigon (Ho Chi Minh City) on a journey that took us far beyond the usual tourist path. We ate where the locals eat, listened to stories passed down through generations, and truly soaked in the rhythm of the city after dark.
We visited a local village tucked away in District 4, where the buildings were once homes built by the U.S. government during the war — now repurposed into community housing for Vietnamese families. Walking through those streets, you could feel the history in the walls… but more than that, you could feel the resilience and joy radiating from the people.
We tasted dish after dish — street-style Banh mi, beef wrapped in wild leaves, steamed rice rolls, snake wine (yes, really!), and a delicate Vietnamese flan served in an eggshell. One fun surprise? Vietnamese pizza made on rice paper — no cheese — yet absolutely delicious! Light, crispy, and seasoned with chili, salt, pepper, lime juice, and of course, plenty of fresh coriander. The way they layer flavour here is truly an art form.
We saw some local puppies 🐶 & even ventured through the vibrancy of the night flower 🌸 market with plenty of different varieties ..
We’ve shared a few photos of the incredible dishes we were lucky enough to enjoy and learn about — each one made with love, intention, and generations of tradition behind it.
One of the most unexpected and powerful moments was visiting a hidden house — with a disguised door that once concealed machine guns and a wartime tunnel system. We even descended into one of these tunnels. To think this is how people lived and fought for survival — it was humbling beyond words.
And still… despite the deep scars of history, the Vietnamese people are some of the most peaceful, kind, and joyful souls we’ve ever met. They have chosen forgiveness over bitterness, peace over pain, and continue to welcome people from all over the world with open hearts.
