💜So I thought I might like to make a delicious liver loving juice with beetroot, ginger, parsley, carrot, celery and spinach
💜And then I thought of a beetroot, spinach, walnut, and feta salad
💜And then I though of making some beetroot hommus with beetroot, chickpeas, sesame seeds, garlic and lemon.
💜Then I wondered about making beetroot chips in the air fryer.
None in the garden currently so I ordered some organic beetroot, thinking in my head I'd get 1 or 2. But I got a whole kilo, so now I need some more ideas!!
💜Why Eat Beetroot?
Beetroot is a powerhouse for:

Here's some ideas I found:
1. Roasted beetroot – earthy, sweet, and grounding; toss with olive oil and herbs.
2. Beetroot dip – blend with tahini, garlic, lemon, and a little cumin for a vibrant hummus alternative.
3. Beetroot juice or smoothie – energising and great before exercise; pair with apple, ginger, and lemon.
4. Grated raw beetroot salad – fresh and cleansing; mix with carrot, parsley, and apple cider vinegar.
5. Beetroot soup (borscht-style)– warming and detoxifying; lovely with dill and coconut cream.
6. Beetroot latte– mix beetroot powder with warm milk and cinnamon for a caffeine-free, antioxidant-rich drink.
7. Beet kvass (fermented beet drink) – traditional tonic for digestion, liver support, and gut health.
8. Beetroot brownies or bliss balls – sneak some puréed beetroot into baking for natural sweetness and a boost of nutrients.
