With this chilly winter weather, we are enjoying nourishing and tasty dals, curries and rice. This simple dish is delicious and packed with nutrition and plant-based protein. The spices are warming and balancing to the body. Vegetables like sweet potatoes, cauliflower, green beans, kale, peas, zucchini can be used in place of the below. Serve on its own or with rice or naan / roti bread. You can find mung dal/beans at the Indian section of most large supermarkets.

Ingredients:

1 cup of split mung beans (washed, soaked for 1 to 6 hours if you have time)
4 - 6 cups filtered water (adjust for preferred consistency)
2 cups of chopped pumpkin
4 tbs of ghee (or oil)
1 tbs minced ginger
1 tbs cumin seeds
1 tsp ajwain seeds
1/2 tbs black mustard seeds
1 green chilli minced (seeds removed)
1/8 tsp asafoetida (Indian section of supermarket)
1 tsp turmeric
1/2 tbs sea salt
1 tbs fresh lemon juice
Fresh coriander leaves for garnish

Preparation:
1. Combine rinsed mung beans with boiling water, 1 tbs of ghee, turmeric, minced ginger and green chilli in a saucepan and cook the beans until they start to breakdown. Then add pumpkin and cook until soft and beans have dissolved into a thick soup.

2. In a small skillet add remaining ghee. Once hot, add cumin, ajwain, black mustard seeds.

3. When seeds starts to crackle and the aroma starts to release add asafoetida. Pour the mixture into the pot of dal. Mix the spices through the dal and add salt and lemon juice. Cover the pot and let the spices infuse into the dal.

4. When ready to serve, garnish with fresh coriander or parsley leaves.

I feel very grateful for the opportunity to run the Resilience & Meditation workshop over the weekend 🙏 This is a topic I’m passionate about, and people were so appreciative for the knowledge I was able to share with them. I thought I could share a few of the ideas we discussed to help inspire you:

> Becoming more resilience means cultivating the ability to deal with life’s challenges calmly, without being overwhelmed, freaking out, getting depressed, or falling apart.

> Often, these feelings come about when things are out of our control, or go differently than how we hoped for or planned. This can be small things throughout the day or really big things. The more we become emotionally invested in a particular outcome, we lose our ability to see the bigger picture and accept an outcome different from what we wanted.

> We will become more resilience when we understand the following: Our ability to control is limited to controlling our behaviour and our reactions. For example, we can reflect before reacting and not indulge in emotional responses.

> How do we achieve resilience and inner calm so that we are not disturbed by adversity, the uninvited events, uninvited comments, and even just daily challenges that might come our way?

> Our happiness and inner peace can’t be dependent on our life always going well! There must be a deeper underlying source of happiness that we can access especially during adversity. We should seek spiritual wisdom and an understanding of our spiritual identity and nature to uncover the deep well of spiritual happiness that we can all experience.

> Don’t carry around emotional baggage from the past and have that guide our reactions. Put it down. Be free.

One of the women who attended said, “The workshop was a wonderful afternoon, and various things that you said have been filtering through my mind over the weekend. Thank you so much for sharing your wisdom and helping us to lead more enlightened lives.”

I hope you can contemplate on some of these ideas and also begin to lead a more enlightened, peaceful and happy life!
