Ingredients 🥬
1 cup couscous
1 block halloumi
1 roasted sweet potato
2 roasted zucchini’s
1 fried red onion
1/4 cup toasted pumpkin seeds

Dressing:
2 tbsp EVO
2 tsp whole grain mustard (I used )

Juice of 1 lemon

You can make friends with salad 🥗

Hosted a dinner and made 2 of the easiest salads, with minimal ingredients but still looked fancy!

First was a tomato, bocconcini & basil salad dressed in EVO & balsamic glaze.

Second was a cos, cucumber, avo & toasted pepita salad dressed in EVO, vinegar & Dijon mustard.

One of the best protein rich snacks in the TUNAverse 🙌

Rice cakes with avo, goats cheese and tuna! Will help tide you over till dinner and a great way to add protein into your diet. Alternatively add another few rice cakes to make it a delicious lunch, add sliced tomato & cucumber for some veg and extra nutrients.

Ok I made this insane salad last night
- roasted 1/2 cauli in dukkah & EVO
- 1 can butter beans, drained
- 1/2 bunch chopped coriander & mint, each
- 1/2 cup cranberries
- 1 cup raw barley, cooked
- 1 carrot, grated
- 1 red capsicum, chopped

Mix all together

Dressing:
2 tbsp EVO, 2 tbsp white wine vinegar, 2 tsp whole grain mustard, 1/2 tbsp honey, 1/2 tsp cinnamon, 1/4 tsp cumin (from the )

I paired it with pan friend chicken breast on the side, but you could just have the salad for a veg option or use whichever protein you like.

💕 Olivia basically just wanted to pick out all the cranberries. After a while she picked up a butter bean and kept taking half bites of them, then spitting out (I’ll take it). I then offered her some barley on my fork and said it kind of tastes like pasta (her safe food) but it’s called barley. She LOVED IT, and kept asking for more barley.

She also smashed all the chicken. So even though she didn’t touch anything else in the salad, and only really had beige foods plus sweet cranberries, it’s still exposure!!
