I share this nutritious Jam recipe every strawberry season, we’ve been making it for years. It’s so good on toast with peanut butter, pancakes and fresh cream, stirred through overnight oats/porridge, dolloped in a smoothie, mixed through yogurt.. the list could go on. Make the most of our beautiful locally crowns strawberries while you can 🍓 😋

500g fresh strawberries (though works well with frozen and defrosted too), 1 tablespoon good quality honey like , 2 tabespoons chia seeds.

Cook the fruit & honey together down until it’s liquid with chunks. Stir through chia seeds and allow to cook. Pour into jars. Freezes well. So make bulk 😉

Pre kids I was such a ducks in a row, structured, highly strung perfectionist . All I can say is cheers motherhood for bringing me back down to earth & teaching me that the important moments are the memories we make together not having a clean house/folded washing/hotel made beds/constant stains on clothes etc (among many other things that get left to the way side with Rugrats running around 😅). I’ve also realised the importance of time, the only thing in the world we can never get back.

Life changing chicken nugget hack. 👇🏼

Chop chicken breast into nugget chunks. Stir through a good quality mayonnaise. Roll pieces in breadcrumbs (I used gluten-free). Bake in the oven/air fryer 180 10-15 min.

Got this from an old 4 ingredient book I had laying around. Honestly blew my mind how good these turned out & with what I feel like is a ‘staple kid’ food you can’t go wrong with how quick they are to make knowing exactly what went into making them. Win win.

I’ve also used this method to crumb fish pieces and it worked great too. Anything to make family foodie life easier 😉

Remember what you can control.

These are before and after pics of my 2.5 yr olds dinner. Steak, potato & an assortment of vegetables. Delicious, varied and nutritious. Swipe to see what he actually ate >>> some steak & potato, much to my dismay none of the veg 🤦🏼‍♀️

It’s bloody annoying when kids don’t eat the food you want them to but if you go back to tip 1 you’ll know that some level of fussiness is NORMAL.

Next is to conquer the battle in our own minds. The frustration of them not eating vegetables every meal, the guilt trip we put ourselves through “they aren’t going to get enough good stuff to stay healthy”, WHY won’t my kids eat vegetables etc the list could go on.

Remember what you’re in control of. While we are responsible for our children we cannot control what they choose to eat, they are their own person.

The 4 things in life we can control are the thoughts we think, the words we say, the actions we take and the attitude we have. I found a lot of peace in this. To make toddlerfoodie life easier remember that you are responsible for what is offered to your child so take the pressure off and focus on providing them a nutritious plate of goodness (your actions are in your control) and trust (so is your attitude) that as you be consistent with this eventually when the toddler phase passes they’ll know that these types of meals are what’s the normal family meals.

It’s tricky times when your kids realise they have choice & the more you have an agenda the more they seem to push back.

So parents, remember what you’re in control of. Your OWN actions, words, thoughts & attitude

30 today. Getting older is great. It means more memories to capture in my heart, challenges to help me grow & new experiences to feel. Life is so precious, everyday we get is a gift.

Vegetable Lasagne pasta bake. Came about when I had left over bolognaise sauce, no pasta sheets & 0 motivation to make the effort of going to the shops. Been a firm family fav since. Thought I’d share...
Make up some bolognaise however you normally do I use the chunky bolognaise from . ADD grated zucchini & carrot. Cook up some pasta, spirals penne, whatever’s in the cupboard, wholemeal variety for added nutrition.

Mix together the meat sauce and pasta & a few handfuls of baby spinach place into a casserole dish. Make some simple white sauce, I make it in the thermomix pour over the top of pasta in dish. Sprinkle with grated cheese and pop in oven for 30 min.

Moral of the story:

1. if you like lasagne but CBF’d to mess around making it this is the solution.

2. are where it’s at for busy families 🙌🏼🙌🏼

Keep feeding your babies simple. Offer what you eat in appropriately cooked and cut ways. Here’s a little inspo for ya.

French toast. Makes two.

Whisk together 1 egg, 1/4 cup milk of choice, 1/2 teaspoon ground cinnamon & nutmeg.

Soak a piece of wholemeal bread in the mix - about 1 minute each side. Fry the soaked bread in a frypan with coconut oil, about 1 min each side till golden brown.

Serve your baby by cooling down and cutting into fingers or squares to self feed.

Serve yourself (and big baby if you have one) topping with full fat Greek yoghurt, fruit + drizzle honey/good quality maple syrup.

Toddlers love engaging in the world around them and in what we do. Getting them in the kitchen to make simple things provides so much teaching & they are way more likely to eat something that they’ve helped to make. I know they are messy but hey it’s all part of the process of learning and the benefits they get far outweigh the extra cleaning we need to do.

A little thing we can do during what can be fussy times (see toddler tip number 1) to nurture a life long healthy food habit.

Date & coconut slice. I make these for breakfast for Reubs. They don’t always get eaten cause, well toddlers... More for me 😋
School lunch box friendly - egg & nut free. Dairy free, gluten free option too.
Ingredients
200g pitted dates
65g desiccated coconut
40g rolled oats/quinoa flakes for GF
100g wholemeal spelt or buckwheat flour GF
1 teaspoon cinnamon & vanilla essence
1 teaspoon baking powder
2 tablespoon coconut oil
1 ripe banana
50ml almond milk

All ingredients into a food processor and blitz until really well combined. I use 10 sec speed 6, sometimes twice if it needs it. Into a baking tray to cook 180 degrees 20 min.

1. Adjust your expectations.

To some degree toddlers will show some level of ‘fussiness’ with food. It might look like one week loving steak & veg for dinner the next refusing it, only eat sweet potato roasted don’t even think about steaming it, not eating much at times then others be ravenous, packing a banana as your on the go snack because you know they love bananas to have them refuse it. It’s bloody frustrating. Hopefully this eases the struggle - IT’S NORMAL.
Why? Someone once told me toddlers are tiny teens. They like to push boundaries. They’ve just realised they can say no, make their own choices, be their own person. As my favourite parenting guru puts it “the toddler years are all about children becoming more autonomous & wanting to stretch their wings”. Take yourself back to when you first turned 18 & you had the freedom to choose. So if you can give yourself some grace & know that some fussy food behaviour is most likely to happen as part of their development it may take the pressure off, we can be so hard on ourselves as parents. It doesn’t mean we stop encouraging nutritious food though, quite the opposite actually but that’s for another post because today’s tip is, adjust your expectations.

Feeding round the clock, sleepless nights, screaming in the car, having to be strategic about outings, packing everything but the kitchen sink in the bag, the carrier a permanent accessory to my outfits, smelling like off milk, constantly saying “we don’t hit the baby, we are gentle with the baby”, getting one asleep to have the other wake, tantrums..
