Had one of the best pancakes this morning. These buckwheat pancakes turned out so light and fluffy. Swipe through for the photos and save this. They’re super easy to make and great for the gut too.

Here’s how:

Whisk 1 egg with your choice of liquid. Add buckwheat flour and baking powder.
Mix until smooth. The batter should be thick but pourable.
Adjust with more liquid or flour if needed.
Heat a pan on low to medium heat.
Pour about ¼ cup of batter and cook for 2 to 3 minutes until bubbles appear.
Flip and cook for another 1 to 2 minutes.
Stack them up and enjoy.
Repeat with the rest of the batter.
