Blueberry pancakes (to start your week right hehe 🍽️🫐)
What you’ll need.
- 1 whole banana
- 1/2 cup oats (GF oats if needed)
- 1/4 protein powder of choice
- 1 egg
- Pinch of baking soda
- Dash of milk (add more to make crepes)
- 1/4 cup blueberries
- handful of chopped nuts (walnuts, almonds, macadamias)
- Cinnamon
Steps.
🥞 In a blender add all of the ingredients apart from the blueberries and blend until well combined.
🥞 In a pan heated to medium heat, cook your pancakes equally on each side until cooked right through.
🥞 They take a little longer to cook than regular pancakes due to the banana so be patient - trust us, they're worth it.
🥞Serve with fresh or defrosted blueberries and chopped nuts of choice. Makes approx. 2-3 pancakes.
