From Garden to Kitchen: Drying my homegrown chilies in the Sun for the perfect tadka!

What is Tadka?
Tadka is like a party in your pan, a popular cooking technique used in Indian cuisine! Imagine tiny spices like cumin, mustard seeds and dry chillies dancing together in hot oil adding their delicious aroma and flavour to the dish. Tadka is the DJ of the dish, it sets the tone, and other ingredients can't help but groove along the beat.

Well, it looks like my expertise in snacking has finally paid off! I recently shared my top gut health snack tip with Caroline Thomason, RD LDN This, Not That! alongside fellow Dietitians (aka Professional foodies) and its all about pairing chocolate with nuts. One of the most frequently asked questions: What is THE best thing I can do for my gut? Should I skip dairy? Should I skip gluten? Should I go vegan?

Here is ONE Gut healthy habit that can last a lifetime, not just for few months

Think INclusion not EXclusion.

Health is NOT about the foods you avoid rather about the foods you add into your diet. Adding in more foods that you want to fill up on will naturally leave less room for less healthy stuff (Think of the super six: Whole grains, legumes, fruits, vegetables, nuts, seeds and don’t forget the spices)

Starting with simple changes can make a BIG difference to your gut health.
For example: If you are drinking too much fruit juice try swapping it with a whole fruit or try swapping white bread with whole grain bread. How about swapping ice cream with fresh yoghurt and berries?

Brussels Sprouts showing off its transformation from "dying" to "crispy tender". It has managed to become a rock star side dish for our weekend lunch during my fridge cleanout.
If you hate brussels sprouts please stop boiling them to death - this activates the sulphurous smell (Please DON'T!!). You don't need to even turn on the oven. All you need is a pan (I have used a cast iron pan) + Extra Virgin Olive oil + Salt + Chilli flakes + 10 minutes of your time. Honestly these gorgeous green roasted brussels sprouts are super addictive (if you know how to prepare them)

In defense of potatoes .... sharing home-made potato roast cooked with spices (chilli, turmeric) and Gingely Oil (You could use Olive oil or any good oil). Royal Blue Spuds from Spudshed is my personal favourite. I bought 2 Kilos for Just $3. This will taste way better and is waaay healthier than the oven fries. I promise.
