Feel like baking this weekend 👩🍳? Try this plant-based recipe 🍋🫒 Its a treat ✨️
My taste buds were spoilt with my mum’s outstanding baking (and cooking) so a few days after I got back from Germany, I was craving …cake!
With plenty of fresh lemons 🍋🍋 at hand from our trees in the garden, I searched for a recipe and found this Lemon Vegan Olive Oil Cake Rainbow Nourishments 🙏
It’s a winner 💛
👉 I used (mostly) organic ingredients and 50% less sugar

I n g r e d i e n t s
2 ½ cups of plain flour
½ cup of sugar
3 tsp of baking powder
Pinch of salt
1 cup of coconut milk
½ cup of extra virgin olive oil
1/3 cup of lemon juice
2 tbsp lemon zest
1 tsp of vanilla extract
D i r e c t i o n s
Mix all the dry & wet ingredients separately, then combine the two – don’t overwork the batter
Add to a loaf pan lined with baking paper
Bake at 180C for up to 1 hour – mine was done in less time
N o t e
I made a topping by combining lemon juice with a little bit of granulated sugar & spread the syrup over the top of the cake when it was nearly finished baking – I put it back in the oven for 5 minutes which resulted in a nice crusty tangy topping 👌
👉 Such a tangy moist cake, perfect with a cup of tea 🍵
