|| Healthy Winter Indulgence 🍪 Oat Cookies
🔸Gluten-free • Plant-based • Delicious🔸
I felt inspired when looking through my beloved One Part Plant book by and used her almond blueberry cookie recipe as a base 🙏
I modified to suit what I had in the pantry - while reducing the amount of oil and maple syrup, I also committed the salt.
Out came these surprisingly yummi oat-peanut cookies with a twist ✨️
Here is my version:
I n g r e d i e n t s
🔸175g blend of peanut and hazelnut-chocolate butter
🔸1.5 tbsp of melted coconut oil
🔸2 tbsp of maple syrup
🔸125g of rolled oats
🔸1/4 tsp bicarbonate of soda
🍫 Optional – Cacao Nibs (crushed cacao beans)
✅ They give a crunchy texture and a touch of chocolatey bitterness
✅ They are anti-inflammatory and support our mood, heart (through flavonoids) & digestive health
✅ The bitter flavours activate the relaxation response in the body via the Vagus Nerve (Parasympathetic Nervous System)
D i r e c t i o n s
✔️ Combine all wet ingredients, then fold in oats and /or cacao nibs
✔️ Take a tablespoon sized dough, roll to a ball and then press gently to flatten
✔️ Bake at 180 degrees for ~ 10minutes - they should still be slightly soft to touch
Enjoy with a cup of tea 🍵 and voila - you have the perfect snack package – at all times of day (in my books anyway)
