🍗 HAINANESE CHICKEN RICE - this is made weekly in my home. It’s high in fiber, protein, & complex carbs. Amazing for immune support! Best of all it’s delicious & kid approved 👍

🍗 Poached chicken:
- Boil chicken breast with skin & bone (keeps it tender) in plain water for 1 hour

🥣 Soup:
In a pot add chicken bones, 2 tsp salt, 1 tsp sugar, 2 tbs tamari, 1 tbs sesame oil, 1 onion, shallots, 2 garlic.
- Boil on medium for 30min
- Optional: add veges (potato, broccoli, carrot, corn, beans, cabbage, bok choy, enoki, shiitake)

🍚 Rice:
- Cook rice with chicken soup broth, half the chicken bones, 1 tsp salt.

🌶️ Chilli sauce:
- 1 onion
- 4 large red chillies
- 4 Thai small red chillies
- 2 garlic cloves & same amount ginger
- 1 tsp salt, 1 tsp sugar
- 1 tbs tamari
- 1/2 lemon juice
- 1/2 cup sesame oil (more if needed ro blend)
- Blend

🌿 Garnish
- Shallots & cucumber on the side

3 ways we can supoort the body’s own healing abilities:

1. Increase fiber intake - support a healthy gut

2. Intermittent fasting - support healthy insulin levels by giving your digestive system a break (delay breakfast or have an earlier dinner, and limit snacks in between meals)

3. Exercise - get moving everyday to support a healthy heart, mind, and body

🧇 WHOLEMEAL WAFFLES - made these yummy dairyfree, fiber & protein rich waffles today. One serve has 14g fiber 👏

🫐 Fiber helps to maintain digestive health, blood sugars, and cholesterol. Daily intake of fiber should be around 20-30g for kids, & 30-40g for adults.
🥞 Batter (serves 2)
- Whisk 2 eggs & 2 tbs sugar/or sugar alternative for 2min on high speed until fluffy
- Add 1/2 cup oil, 2 tsp vanilla, 1&3/4 cup almond milk & mix
- In a separate bowl add 2 cups flour, 4 tsp baking powder, 2 tsp ground cinnamon, 1/2 tsp salt & whisk
- Add dry & wet ingredients together & whisk on low for 1 min till batter is mixed (do not over mix)

🧇 Cook in a waffle maker or use as pancake batter

🍓 Garnish with berries (for extra fiber) & maple syrup (optional). Enjoy!

🥣 CINNAMON OAT PORRIDGE - high fiber breakfast for the kids today (7g fiber per serve)

🥣 A high fiber breakfast will help you have sustained energy levels, stay fuller for longer, decrease sugar cravings, & keeps your cholesterol & blood sugars in check. A perfect meal to start the day with.

🌺 Serves 2:
1. In a saucepan add 1/2 cup oats, 2 cups water, 1 mashed banana, & 1 tsp ground cinnamon
2. Bring to the boil, then cover and simmer for 5 minutes
3. Top with blueberries, sliced apples, & your fav nuts

🫐 Dietary fiber increases the internal waste output into your stool & also softens it. Fiber helps to maintain digestive health & binds to bile, fatty acids, blood sugars, and cholesterol & excretes these in stool. Daily intake of fiber should be around 20-30g for kids, & 30-40g for adults.
