🍗 HAINANESE CHICKEN RICE - this is made weekly in my home. It’s high in fiber, protein, & complex carbs. Amazing for immune support! Best of all it’s delicious & kid approved 👍
🍗 Poached chicken:
- Boil chicken breast with skin & bone (keeps it tender) in plain water for 1 hour
🥣 Soup:
In a pot add chicken bones, 2 tsp salt, 1 tsp sugar, 2 tbs tamari, 1 tbs sesame oil, 1 onion, shallots, 2 garlic.
- Boil on medium for 30min
- Optional: add veges (potato, broccoli, carrot, corn, beans, cabbage, bok choy, enoki, shiitake)
🍚 Rice:
- Cook rice with chicken soup broth, half the chicken bones, 1 tsp salt.
🌶️ Chilli sauce:
- 1 onion
- 4 large red chillies
- 4 Thai small red chillies
- 2 garlic cloves & same amount ginger
- 1 tsp salt, 1 tsp sugar
- 1 tbs tamari
- 1/2 lemon juice
- 1/2 cup sesame oil (more if needed ro blend)
- Blend
🌿 Garnish
- Shallots & cucumber on the side
