💛 How are you nourishing yourself and your family?

This dish is on the weekly rotation in our home, it’s easy to prepare, can sometimes stretch over two meals and my kids love it too!

Zucchini Bake

3-4 large zucchini grated
1 onion diced finely
4 cloves crushed garlic
1 whole bunch chopped parsley
1 cup nutritional yeast
2 cups flour of choice
12 jumbo or 18 regular eggs whisked
2 cups grated cheese of choice
2 tsp dried oregano
2 tsp sea salt
Cracked pepper
Chopped cherry tomatoes or olives to decorate top
Drizzle of olive oil

Mix all ingredients together and cook in a large lined oven dish with a lid until cooked through and golden on top

Cut into 8 slices, 33g protein per serve

Cut into 12 slices, 22g protein per serve
