Zesty Mediterranean Tomato Salad

This vibrant salad is bursting with fresh herbs, juicy cherry tomatoes, and briny green olives—perfectly tied together with a tangy garlic-sumac vinaigrette. It’s quick, refreshing, and full of bold Mediterranean flavor!

Ingredients:
• 2 cups (450g) cherry tomatoes, halved
• 1 red onion, thinly sliced
• 1 cup (45g) fresh parsley, chopped
• ⅓ cup (20g) fresh dill, chopped
• ⅓ cup (70g) green olives, pitted

For the Dressing:
• 2 cloves garlic, crushed
• ½ tsp sumac
• 1 tbsp red wine vinegar
• 1 tbsp lemon juice
• 1 tbsp water
• ¼ cup (60ml) olive oil

Steps:
1️⃣ In a large bowl, mix tomatoes, onion, parsley, dill, and olives.
2️⃣ In a jar, shake together garlic, sumac, vinegar, lemon juice, water, and olive oil until combined and slightly thickened.
3️⃣ Drizzle dressing over the salad and toss gently.

Serve chilled or at room temperature for a burst of flavor in every bite!
