Need a last minute delicious and easy DF & GF dessert to WOW everyone at Christmas?! Check out Merge Health Coach & Nutritionist Leah’s fav GF & DF Pav!

If you are handy in the kitchen check this recipe for a homemade base (so no additives/preservatives) but can get GF bases from Coles/Woolies if no time to make from scratch 😉

To add an extra hit of flavour and cut through the sweetness of the meringue is to first layer on some tangy lemon/lime or passionfruit curd. Homemade or store bought for convenience *contains butter which is exempt from dairy free restrictions :) for a DF option just use passion fruit pulp.

TOPPING
Lemon/Lime or Passionfruit Curd (omit for low histamine diet)
Solids from 2 cans full fat coconut milk, refrigerated overnight
Vanilla or lemon zest
Fresh Seasonal fruit: Mango, Mixed Berries, Passionfruit (low histamine: sliced stone fruit, mango and blueberries)
Mint Leaves

INSTRUCTIONS
1. For the Pavlova: recipe https://www.recipetineats.com/pavlova-recipe/ (or use store bought if short of time, just ensure it is gluten free).

2. Make coconut cream: Remove from fridge and carefully scoop thick cream part off the top of chilled coconut milk (save the water for another use). Whip cream with electric mixer for approx 3 mins or until fluffy. Add vanilla or lemon zest and mix through.

3. Gently spread 3-4 tablespoons lemon/lime or passionfruit curd across top of pavlova

4. Spread whipped coconut cream gently on top of curd layer

5. Arrange fresh sliced fruit and berries and scatter a few fresh mint leaves on top.

6. Serve & Enjoy!
