Hey everyone,
Amongst the craziness of the world right now, my online studies are still going full steam ahead, plus, last week we moved into our new apartment 😅 safe to say it’s been a big week! So apologies for the delay with the recipes. I’ve also not had my kitchen set up properly to make my own versions of these meals, so, today I’m going to share with you instead one of my fave meals from Green Kitchen Stories Sweet potato stuffed with Dahl 🍠✨
It is absolutely aaaamazing and it’s a recipe I make very regularly. It also happens to be full of Vitamin A 🤗 you’ll find:
- Sweet potato
- Carrot
- Spinach
- Apricots
- Ghee
- Sour cream
All great sources of vitamin A.
The original recipe calls for yoghurt not sour cream, but either tastes amazing I reckon.

V I T A M I N A 👇🏼

Vitamin A comes in two main forms in food; preformed vitamin A (Active form of vitA, ready to go and be used by the body) and pro vitamin A carotenoids (needs the body to convert them to the active vitA first). You’ve probably heard of ‘beta-carotene’, this is an example of a pro vitA carotenoid.
These guys you’ll find in fresh veggies and fruit, particularly green, orange and yellow fruit and veg. Think
- Sweet potato 🍠
- Spinach 🥬
- Pumpkin 🎃
- Carrots 🥕
- Kale 🥬
- Capsicum 🌶
- Broccoli 🥦
- Apricots 🍑
- Mango 🥭
- Rock melon 🍈

Pro vitamin A you’ll mostly only find in animal sources:
- Liver
- Cod liver oil
- Full fat butter and milk
- Yoghurt
- Egg yolk
- Salmon
- Sardines and other fatty fish 🐟

Why is it important for strengthening my immunity? 🤔
VitA is important for the normal functioning of innate immune cells (naturally present immune cells) and of T and B lymphocytes (immune cells responsible for recognizing germs and defending the body against them).
It is also needed for the generation of antibody responses to antigens (antibodies are blood proteins that are produced by the body in response to specific antigens (foreign substance)) 🙌🏼

Hey everyone,
I wanted to share with you all a little bit about what you can be doing to strengthen your immune system during this time 🥬🥒🥦 As there are no specific treatments or vaccinations for COVID-19, we are all very much reliant on the strength and resilience of our own immune systems, should we contract it 🦠

Did you know there are certain foods, vitamins, minerals and lifestyle practices that you can implement that will help to strengthen your immune system? You CAN do things to improve your resilience! 🙌🏼
