Hey everyone,
Amongst the craziness of the world right now, my online studies are still going full steam ahead, plus, last week we moved into our new apartment 😅 safe to say it’s been a big week! So apologies for the delay with the recipes. I’ve also not had my kitchen set up properly to make my own versions of these meals, so, today I’m going to share with you instead one of my fave meals from Green Kitchen Stories Sweet potato stuffed with Dahl 🍠✨
It is absolutely aaaamazing and it’s a recipe I make very regularly. It also happens to be full of Vitamin A 🤗 you’ll find:
- Sweet potato
- Carrot
- Spinach
- Apricots
- Ghee
- Sour cream
All great sources of vitamin A.
The original recipe calls for yoghurt not sour cream, but either tastes amazing I reckon.
