Good, wholesome food is so important as we start to enter the cooler weather (except for this week where we’ve got beautiful warm weather!)
Now, those who know me, I am by far the best cook in the world – but some dishes are hearty and wholesome, and luckily I’m good at cooking those!!
This is a new recipe I’ve been trying, which brings together chicken bone broth, or you can do it as a vegetable version, and provides really good nourishment and nutrition for the body leading into the winter season.
It supports the yin, so great for mums to be, new mums and women in Peri/menopause.
The bone broth helps support building blood.
The avocado is beautifully nourishing for the yin.
I’ve also added a jar of salsa Verde, but only a mild version so it’s more for flavour than spice.
Ground cumin, which is lovely and warming, and it’s great support for the digestive system.
And chicken breast or chicken thigh fillets, used in this context to help nourish and build resilience in the body.
Meat in Chinese medicine is often used to rebuild and as a therapeutic option for those who need it. We don’t always prescribe meat in meals, because sometimes we’re better to have a more vegetable based diet.
Everyone is individual!
However, this particular dish is great for most constitutions, and specially if you are a little digestive sensitive, you could make that with low GI rice, a sweet potato mash, or just simply have it as soup like dish.
Ingredients:
600 g of chicken breast or thigh fillet
6 cups of chicken bone broth, chicken stock, or vegetable stock
Add shiitake mushrooms if you wish
2 teaspoons of ground cumin
A tin of refried beans, or pinto beans, or you may use four bean mix if you prefer
And 2 cups of salsa Verde (I got mine from Coles today)
Literally throw the whole thing in slow cooker, and cook on high for 4 to 5 hours
You can do this as a stovetop dish as well, obviously cooking for less time and watching you don’t burn to the bottom of saucepan!
