Hallo and Happy New Year to you. 2025, the year to be alive, has begun with stunning blue skies and bright sunshine, catchups and meals shared with family and friends, ocean swims in unchartered waters and beautiful bushwalks, new recipe inspiration and lots of cooking and of course eating!

I am kicking off the working year with a free public cooking demonstration on Loving Leftovers, the third in the series for The Coal Loader Centre for Sustainability, an extraordinary North Sydney Council environmental, sustainability and community initiative. If the event is booked out, please add your name to the waitlist as spots do free up.

Some snaps of this year's new recipes using leftovers...

Low food waste cooking centre for sustainability Saturday 13 July. Love food hate waste

Around 30% of the food grown for human consumption ends up in Landfill.
Food waste  contributes to around 10% of greenhouse gases, globally. (That’s increased from 8% in 5 years.)
Food waste costs the average Australian household $2-5000/ year.
Ouch that hurts! There’s so much potential for hope in the kitchen and small changes on a large scale make a big difference! We are also cooking a delicious pumpkin based dahl and offering spiced pumpkin and banana muffin and roast pumpkin wedge tastings. 😋

Reducing food waste can
* Reduce your carbon footprint
* Protect important resources &
* Save you money

We will discuss strategies, to reduce food waste.
* Fridge and Pantry audits
* Shop seasonal
* Vegetable Storage
* Navigating specials
* Eating the whole vegetable, Root to leaf
* Reducing packaging
* Composting

Breakfast on the rocks. When you’re trying to keep your blood glucose levels stable, a frittata like this one will get you a 10/10 score. It’s protein and fibre (and flavour) full. Eaten after a swim in the chilly downpour, it was very nourishing. There is more and more emerging evidence that stabilising blood glucose levels, and keeping them in a narrow band, is beneficial for long-term health. Fluctuating blood glucose levels can adversely affect weight management, mental health, immunity, sleep and your risk of developing arthrosclerosis, neurodegenerative, disease, cancer, and cardiovascular disease. So it’s worth keeping them stable. Don’t know how? Book in for an appointment via my website. And for our mental health, back to the ocean … Big fat drops of rain on grey green water. Port Jackson shark. Sting ray. Fish galore. Stunning.

Attended a beautiful afternoon tea book launch for the amazing chef in the totally warm and gorgeous ‘s stunning garden today with my Mum. Jane was such a warm and welcoming host - Belinda spoke really beautifully about her career and where it’s brought her from and taken her to over the last 40 years. Incredibly interesting stuff. The cakes and scones were delicious and I’m looking forward to cooking some dishes from her new book of her favourite recipes “In Belinda’s kitchen, essential recipes” Belinda’s recipes always work?

Do you Remember cutting recipes from newspapers for cooking inspiration? Well I don’t get newspapers anymore but I’m doing the artistsway with at artbau and we do lots of creative snipping and crafting and look what turned up when I was engaged in Matisse style scissor drawing! This delicious chickpea and pumpkin bake. I didn’t follow the resume and we ate ¾ before I thought to take a photo! Just reminded me that I like snipping recipes from newspapers! Where do you get yr recipe inspo from? I didn’t really follow it…but I made some tikka masala chickpeas, roasted Some butternut rounds and topped it off with a tarka, served with red and black rice and a yummy salad. PS I highly recommend Frankie’s classes ☺️

Fresh food from the garden. If I can grow it, anyone can. My thumb is not the greenest! Whilst I love Gardening, it does not come naturally to me but Cooking does and that’s enough to keep some skin in the game. Pictured are lemons from our 25 yr old tree which bore its first 🍋 only about 10 years ago, rhubarb inheristed from my legendary gardening mother in law ( mine is not as prolific as hers but it produces) and leeks which I must say, are very satisfying to grow. They grow their own little pups, which in turn grow into big leeks with their own pups. Water these 3 enough and they will reward you. I’ve made preserved lemons, a spring fruit crumble and saved the peel for the polyphenols and fibre to feed the family’s microbiome. And ofc “Gardening has many health and therapeutic benefits and can be very enjoyable. It’s an activity that everyone can enjoy. People with disabilities, seniors and children can find it especially rewarding to spend time in the garden tending plants and growing their own food. With some planning and thought, you can create an interesting, productive and pleasant space that can be used as an edible garden.
An edible garden does not have to be large. Your garden can start small with a few pots and containers or even just a window box with a few suitable cuttings or herbs”.(betterhealth.VIC.gov.au)

This morning, a port Jackson 🦈 swam through the water between my waist and my arm - it was magical. I went for a quick dive but very satisfying dive with my neighbour, Indra. We are lucky to have connections with such wonderful neighbours. I heard a story on the radio today about the longevity of insects and in relation to a particular species of black ants, it was said, that their lifespan decreases from several months to just a few days when they are separated from their colonies. Just goes to show, we all need connections. Connection increases human health span too and is one of the secrets of the worlds most long lived peoples. Will you ever look at ants the same way again?

Add “foraged” citrus peel to your dishes and boost your gut health and immunity and increase antioxidant and anti-inflammatory activity, whilst reducing food waste. Citrus peel contains a powerhouse of compounds, including polyphenols, essential oils, vitamins, and fibre. Remove the zest from lemons, oranges and limes with a micro plane of peeler. Store In the fridge in water or freeze. Add peel to soda water and kombucha, Finley chop with garlic, parsley and olive oil and use as a topping for stews and casseroles, add two dips, salads, and smoothies. Now that’s delicious, nutritious, conscious, eating, jump on the bandwagon. .

The flora around Manly dam never ceases to impress. It’s particularly fabulous right now. Cassie and I love our backyard so it’s not too challenging to get out and about. We try to get in at least 10,000 steps a day and I must say I find my step counting technology very motivating. If I reach the afternoon with low steps, and Cassie is keen (she’s always keen) we hit the track and pound some pavement. Triple dopamine hit. Exercise ✅ happy dog ✅ step goal reached ✅
