After we closed About a Boy & a Girl we still held onto our dream of a space with a strong connection to wellness, community & all things delicious.❀️ It's has taken us a few years of hard work & sacrifice to rebuild from the financial mess we were left with, however we can excitedly announce that we have purchased a beautiful property in the Lockyer Valley. We have named our piece of paradise Tenthill Creek Farm after the pristine creek that runs past our front gate and down the valley. There is 100 acres to explore and work with, we have heaps of plans ahead so we'd love for you to come along for the journey. ❀️

One of my favourite recipes delicious, flavourful & super easy to throw together. β™₯️β™₯️

WINTER MINESTRONE
(Vegetarian & Dairy Free)

INGREDIENTS
2 Tablespoons Olive Oil
1 Tablespoon Dried Rosemary (or 2 Large Sprigs of Fresh), finely chopped
2 Garlic Cloves, crushed
2 Red Onions, finely chopped
2 Stalks Celery, finely chopped
2 Carrots, finely chopped
2 Tablespoons Tomato Paste
2Γ—400gm Tinned Tomato's
2x400gm Tinned Mixed Beans
6 Cups Vegetable Stock
1 Cup Small shaped Pasta (optional)
1 Cup Frozen Peas
1 Cup Kale or Spinach, chopped
Dairy Free Pesto, to serve
Salt & Pepper, to taste

METHOD
1. Heat olive oil to a medium heat in a large pot then add the onion & garlic sautΓ©ing until onion is just translucent. Add the rosemary, carrot & celery and continue cooking for a further 5 minutes.
2. Next add the tomato paste, stirring for 2 minutes then follow with the tinned tomatoes & vegetable stock.
3. Bring the soup to a simmer, cover & cook for 35 minutes, stirring occasionally.
6. Stir through the beans, pasta, peas, kale & then continue simmering for the cooking time recommended for the pasta.
6. Adjust seasoning to taste and serve with a generous dollop of Dairy Free Pesto.

Mushrooms are a great source of Vitamin D, B Vitamins & trace minerals like Selenium. However they are also rich in a compound known for its unique properties, Ergothioneine which is gaining attention for its role in promoting overall well-being. Ergothioneine is a naturally occurring antioxidant and anti-inflammatory compound that offers numerous health benefits.Β 

1. Powerful antioxidant effect: Ergothioneine is known for its potent antioxidant properties. When we consume mushrooms rich in ergothioneine, this compound helps protect our cells from harmful free radicals.

2. Boosts the immune system: Having a robust immune system is essential for maintaining good health. Ergothioneine contributes to the proper functioning of the immune system. By enhancing the activity of immune cells, ergothioneine helps the body fight off infections, viruses, and even some types of cancer cells.Β 

3. Supports brain health: Research suggests that ergothioneine may play a vital role in maintaining brain health. Oxidative stress and inflammation can contribute to neurological disorders like Alzheimer's disease and Parkinson's disease.
