Now we enjoy the leftovers 🤭 can’t quite believe that’s almost another year wrapped 🫣

We certainly have been enjoying leftovers of Christmas ham on everything 🤪 ham and eggs, ham and salad, ham and cheese toasties 😆 not to mention the abundance of Chrissy chocolates 🍫

Christmas sides 🎄🧡

Honey roasted carrots with thyme and goats cheese 🥕

You’ll need:
1-2 bunches of Dutch carrots 🥕
1 jar of goats cheese
2-3 sprigs fresh thyme
1 teaspoon local honey 🍯

Preheat the oven to 180C

Line a baking tray with baking paper. Take the green tops off the carrots and place them on the tray.

Drizzle honey over the top, as well as a tablespoon of oil from the goats cheese (or extra virgin olive oil 🫒).

Take the thyme off the sprig gently and sprinkle all over.

Bake for 20 minutes, then for the last 10 minutes, add some of the goats cheese and put back in the oven.

Serve with Christmas meats, umami salads and all the Christmas toppings 🧡

These are a few ideas we came up with for the foodie and the hard to buy for!

- home made jams, chutneys and sauces, we have recipes on .clinic but you can also find great recipes in cook books from your local library 📚 every year, Ellie makes home made food treats to share with the family - this year will be a mango chili chutney 🌶️🥭

- Gohan is a beautiful Japanese cook book by 🍙 not only are the recipes themselves authentic and delicious, but the whole hardcover book is beautifully presented and just a lovely read.

- hot sauce 🥵 for those hard to buy for people who have it all!

- bamboo underwear is just so soft and comfy, they still have some Black Friday sales happening on some products 🩲🧦

- have the best candles, these are local to the Gold Coast, a small business in Currumbin on Traders Way, all of their candles smell amazing and they have lots of other goodies in store too, definitely recommend going in if you are a GC local 🕯️

- you can’t go wrong with any of their flavours, these chocolates are legit 🍫❤️ our favourites are chewy caramel, hazelnut praline and butter pecan caramel but honestly, every flavour is 👌🏼🤤

- have a lovely range of herbal teas, black and green teas, chai and latte powders. We 🫶🏼 their whole foods ingredients, Ellie is currently having the Australian Native iced every day and loving it. This one is for the tea lovers, there is a big range to choose from!

- homemade chocolate bark 🍫 some past creations include dark chocolate with orange, ginger and tahini, pistachio and cranberry, roasted hazelnut and marble (mix dark and white chocolate in a swirl). You could also do a homemade rocky road to gift 🤤

All these gifts are under $50, whether you’re buying for family secret Santa or everyone in the fam, a gift at Christmas is just sharing one of the love languages. It’s not the most extravagant present that means the most, but the time spent with loved ones and memories shared, and food made with love ❤️

We 🫶🏼 our wholefoods recipes ~ there’s something to be said for having a dietary focus on diversity, plant based foods combining with sustainably sourced proteins (animal or plant).

We also love the convenience of tinned legumes, microwave whole grain mix packets & frozen veg and berries.

Whether you are working full time, with or without children - it is time consuming to meal prep, to grocery shop, to plan healthy foods for the week 😅 sometimes, these convenience foods in a packet are the reason you can get 4 types of whole grains instead of 1, they mean you can add beans or lentils to your mince without remember to soak your legumes for hours beforehand.

You might see on our recipes we include these rice microwave packets, canned legumes and frozen vegetables - there is always an option to cook these foods from scratch (instead of a microwave brown rice, wild rice and quinoa blend, you can choose to cook all separately and then mix the cooked grains at the end) or use dried legumes and soak them in advance.

Our focus will always be on providing nutritious 🤝🏼 delicious recipes that don’t take hours to cook 👩🏻‍🍳 (unless it’s our slow cooked lamb shoulder but we promise that is worth the wait!) 🧡

Our roasted chickpeas and cauliflower on tzatziki is a great way to add legumes - spiced and aromatic, this dish is also high in protein thanks to plant proteins in chickpeas + Greek yoghurt in the tzatziki.
