Need an afternoon pep up....this is the one!

Collagen Mint Chip Smoothie

2 pitted dates, roughly chopped

½ teaspoon grated fresh ginger

½ teaspoon maca powder

1 serving collagen powder

1.5 tablespoons Almond butter

1 tablespoon cacao nibs

¾ cup unsweetened almond milk

3 ice cubes

⅓ cup mint leaves

Add all the ingredients to a blender and blend until ice is well pulsed. Enjoy.

It's still cold in the mornings in Tassie and Im craving warm slow cooked foods even in Spring. Here's a very yum slow cooked warm rice dish to pop on before bed, ready for the morning.

Overnight Slow Cooker Sweet Brown Rice Porridge
Serves 4

1 cup short-grain brown rice

4 cups unsweetened almond milk or any other nut milk

2 tablespoons honey

½ teaspoon salt

1 teaspoon vanilla bean paste

¼ cup chia seeds

¼ cup ground flax seeds

TO SERVE:

sliced bananas

toasted walnuts

cinnamon

1. Combine the rice, almond milk, honey, salt, vanilla bean powder, and 2 cups water in a slow cooker. Set to low and cook for 8 hours.

2. Check the rice after 8 hours. It will look too thin, but don’t worry. Vigorously stir the porridge for a few minutes to help break up the rice, releasing the starches, which will thicken it. Then add the chia and flax seeds and continue to stir—the chia seeds will also help thicken the porridge. Spoon into bowls and top with the bananas, walnuts, and a sprinkle of cinnamon.

Research has shown people that consume 7 servings of fruits and veggies a day have a lower risk of cancer and cardiovascular disease than those who don’t. Green smoothies are a wonderful (and easy) way to get those several of those servings into your diet!

Once you get the hang of it, green smoothies are easy to make, and the combinations are endless. Below is a simple framework that you can follow.

Choose your base:

Add 2 cups of one of the following bases to your blender:

Water
Coconut water
Coconut milk
Kefir
greek yogurt
Almond milk
Cashew milk
H**p milk

Choose your greens:

Choose 2 cups (tightly packed) of the following greens and add to your blender:

Spinach
Kale
Swiss chard
Collard greens
Dandelion greens
Turnip greens
Beetroot greens
Lettuce
Zucchini

Choose your fruit:

Choose 3 cups of the following fruit to add to your blender:

Banana
Cherries
Raspberries
Blueberries
Blackberries
Strawberries
Mango
Pineapple
Papaya
Avocado
Peaches
Pears
Apples
Kiwi

Supercharge it:

Choose 1 tablespoon of the following superfoods to add to your blender:

Coconut oil
Cacao
Chia seeds
Cinnamon
Maca
Spirulina
Chlorella
Lemon

Blend and enjoy!
