Weekly Health Challenge: make Chimichurri
Ingredients
• 1 cup flat-leaf parsley, finely chopped
• 1 cup fresh coriander (leaves + tender stems), finely chopped
• 2 anchovy fillets, finely minced
• 2–3 cloves garlic, finely minced
• 1 fresh red chilli, finely chopped (deseed for less heat)
• 2 tbsp red wine vinegar
• ½ cup extra-virgin olive oil
• Sea salt & cracked black pepper to taste
Method
1. Finely chop parsley and coriander by hand.
2. Mince anchovies, garlic, and fresh chilli into a paste.
3. Combine herbs and paste in a bowl.
4. Stir in vinegar, then olive oil.
5. Season lightly (anchovies add salt), adjust to taste.
6. Rest 10–15 minutes before serving.
