Wishing everyone a healthy, happy 2022!
Know that it is OK not to always have a plan, because let's face it the past 2 years have taught us despite our best efforts, plans can change at the drop of a hat.
Release trying to control everything.
Focus on those things we can change.
Take time to be still
To be quiet
Stop scrolling mindlessly seeking answers
Hear and feel what the heart says
Lead with love not fear
Love those around you hard
Immerse yourself in nature
Enjoy the simplest things and those precious fleeting magical moments,
for its those that bring us the most joy and peace.

Some delicious rainbow ingredient ideas to top your yogurt, smoothies or oats and brighten your day.

This ones packed with flavour and nutritionsl goodness.

Ingredients today are;

🌱baby spinach & kale mix, rich in iron and magnesium

🌱avo, evoo & flax seeds for healthy fats to increase satiety

🌱tomato for vit C and antioxidants in lycopenes

🌱chickpeas for fibre and protein

🌱lemon juice for vitamin c

🌱pumpkin seeds for iron

☉ Eating in the sun to get my daily Vit D levels to increase immunity

Today's weekly salvaged ingredients from my Monday fridge clean out included cabbage, snow pea sprouts and carrot. So with that, we decided to 'virtually' travel to Japan and make Okonomayaki (Japanese savoury pancakes).

These are delicious, simple and quick to make and best served with a blend of your favorite mayonaise and hot sauce (for which I use Barneys Black Label Chilli Sauce of course 😉).

You may use wide variety of vegetables for this, so please swap out with what you have, my recipe is below, it's gluten free but you can also use your flour of choice.

Ingredients

3-4 cups of finely shredded cabbage
1 carrot grated
1cup sprouts finely chopped
3-4 spring/green onions
3/4-1 cup flour (I used buckwheat and coconut flour, but rice or pain flour would work too
3 eggs
1.5 Tbs soy sauce
1 Tbs sesame oil
1/2 C water
white pepper to taste
oil for fry pan

Method
1. Finely grate and chop vegetables place in large bowl
2. In a separate bowl whisk water, soy sauce, sesame oil and eggs until combined. Slowly add the flour to make a thick batter.
3. Add batter mix to vegetables and combine.
4. heat oil in pan and spoon mixture to form small pancakes, flatten well with a spatula and cook on medium/low heat slowly for about 4 minutes each side.
5. Serve with spicy mayo, sesame seeds and shallots.

Enjoy and know you are increasing your veg uptake and saving food from wastage. Oh and another hot tip, eat your meal in the sunshine to boost those vitamin D levels for increased immunity. Especially for us in the southern hemisphere as we are now entering Winter ☀☀☀

Simple tips to build a healthy, nutritious, lunch bowl!

🌱use what is in your fridge and pantry, left overs are a great addition to any nourish bowl and saves on food waste
🌱 eat the rainbow, aim for a variety of colours to ensure variety and enhance micronutrient intake
🌱 ensure at least 50-75% of your bowl are vegetables or salad or 'living food' ingredients
🌱Add healthy fats like avocado, nuts, oily fish, seeds.
🌱 always include a protein source like tofu, tempeh, lean meats, fish, legumes, dairy or eggs
🌱Add some fermented foods to encourage good gut bacteria or some seaweed for some essential, iodine, iron and calcium.
🌱include quality complex carbohydrates like quinoa, brown rice, legumes, for added fibre.
🌱Add your favorite home made dressing and you will power through the rest of the day!

Save on food waste by using those less than perfect veg scraps by turning them into a delicious veggie slice.

A nutritious protein, fibre packed snack, between meals or perfect for that late breaky on the run or for the lunch box.

1.Just simply grate or finely chop what you have left in the fridge,
(I used zucchini, broccoli, cauli, spinach, corn and sweet potato).
2.Sautee quickly in a pan with some olive oil, garlic, salt and pepper. Stir in 2-3 Tblsp of buck wheat flour or almond meal at the end with heart off.
3.Pop in a lined tin. Whisk 4-6 eggs (depending on how much veggies you have) add some pizza cheese blend, tasty or parmesan and or over the top. 4.Bake on 200 degrees for 20-25 mins or until browned and set in the middle.
Oh and best served with Barneys Black Label Chilli Sauce 🌶🌶🌶

Why I Love Juicing!

Juicing is a wonderful way of rehydrating and accessing nutrients quickly.

Sometimes, when our digestion feels sluggish, if we have been over indulging in rich / processed foods, or when we are feeling a little Meh! Juicing can be a great tool.

Although I do not believe juicing to be a quick fix or cure all, it can be a great complimentary addition to any healthy diet when done correctly.

An important consideration to be aware of, is unlike smoothies we do lose the fibre content when we juice. This can cause a spike in our blood sugar. Be mindful to lean toward vegetables rather than just fruit, because fruit has a high sugar content in juice form.

Be brave and add some fresh ginger, lemon or turmeric to your juices for that extra zing to help in warding off winter sniffles.

Watching the heavenly rain on the veggie patch whilst pottering in the kitchen!😍😍😍
Food prep this week is a big vegan shepherd's pie and a meat one for the carnivore & zucchini fitters for a tennis party this arvo. Honestly, I hope this rain continues for the next four weeks straight. Our parched burnt land needs it more than ever ⛆⛆⛆

Things have been a little quiet for me on IG lately... with university demands, the fire threat to our family farm in the Nambucca Valley and life in general, social media has certainly had to take a back seat.

On a brighter note today is the first day we have cleaner air, somewhat blue skies, I've been able to practice yoga with the gorgeous and I have a rainbow macro plate of nutrient dense food and for those things in incredibly grateful for.

Summer requires hydration and this Watermelon Cooler never disappoints.

Simply blend 3 cups chopped watermelon, large sprig of mint, squeeze of lime, 1-2 cups of ice, 1 cup iced water. Once blended, poor 3/4 full and fill up with sparkling water.

Watermelon is so refreshing and is a good source of vitamin C, potassium & vitamin A (beta carotene). It will leave you cool, refreshed, and energised.

Magnificent Mondays start with movement and a plan.

Did you know that if you exercise on a Monday research tells us that you are way more successful at continuing exercise routines and healthier habits during the week.

Also nothing like an endorphin release to kick those Monday blues.

This was my movement for today, a beautifully challenging soft sand 10km loop.

Still plenty of hours left in the day to get out there, especially now in NSW Australia we have daylight savings again.

There is an immense power within that statement.
Imagine if you could start something wonderful before then?

80 days is a great length of time to create some healthy changes and hit that 2020 ground running. Don't wait for the new year, the time is now.
