PESTO TUNA PASTA SALAD

A go to for busy work days or for those weeks where you literally don’t want to meal prep! I used the Vetta Pasta | Vetta Flour] protein pasta and it is so damn good. Leaves me feeling full for ages!

Time: 15 minutes
Serves: 2

Ingredients:
1 cup uncooked Vetta Pasta | Vetta Flour] protein pasta
2 x 95g tuna cans
1/4 cup olives, drained
1/4 cup sundries tomatoes, drained
Cucumber, sliced
Carrot, sliced
1 medium bag of mixed salad
2 tbsp. pesto pasta sauce

Method:
1. Cook pasta according to packet instructions
2. Prepare salad ingredients
3. Once pasta is cooked and drained, place into a container and add pesto sauce and mix well to combine.
4. Divide pasta between two containers and had tuna and salad to each container.
5. Enjoy!

QUICK & CONVENIENT MEALS!

This week I am loving the Macro Satay Tofu! I cooked it with all the left over veg in the fridge, added some noodles and had the perfect lunch ready to go!

Great source of plant-based protein and low in saturated fat.

Only takes 15 minutes (including chopping) so there are no excuses!

QUICK & CONVENIENT MEALS!

This week I am loving the Macro Satay Tofu! I cooked it with all the left over veg in the fridge, added some noodles and had the perfect lunch ready to go!

Great source of plant-based protein and low in saturated fat.

Sunday Market Haul 🥦🥭🍓🫐

Had the best morning exploring all the market stalls at and getting all the fresh and local produce for my meals and snacks this week!

The box of mangoes was the best $12 I have ever spent! Already cut up half and put them in the freezer and will have the rest with breakfast this week 🤩

FUN FACT: Not all fitness trainers can do chin ups… 🙋🏽‍♀️

To be honest I find them so hard but that just motivates me to work even harder to build my strength and achieve my goal of completing 10 chin up’s (over hand grip).

Does it frustrate me that I can’t just do them, YES! Do I have little tantrums because they challenge me, YES! But that’s what’s going to make it so satisfying when I achieve my goal! I’ll make sure to keep you posted 👊🏼

Practice… PATIENCE… practice!

CHOC APRICOT MUESLI SLICE

The perfect snack for everyone. Whether you are always on the go and need something quick or you need something to cure those afternoon sugar cravings, this slice is a must 👌

Ingredients:
1.5 cups rolled oats
1/3 cup dried apricots, chopped
1 tsp. Cinnamon
1/3 cup almonds, chopped
1/4 cup shredded coconut
1/4 cup pepita seeds
1 tbsp chia seeds
1/2 cup honey
1/4 cup coconut oil
1 tsp vanilla essence
2 tbsp peanut butter
1/4 cup dark chocolate chips for topping

Method:
1. Pre-heat oven to 160 degrees
2. Place all dry ingredients into a bowl and mix well.
3. Add the coconut oil, honey, peanut butter and vanilla essence to a bowl and heat in the microwave for 30 seconds or until melted and mix well.
4. Add honey mixture to the dry ingredients and mix well.
5. Place mixture into a baking tray lined with baking paper and press mixture down firmly.
6. Bake for 20-25 minutes.
7. Once slice had cooled, heat chocolate chips in the microwave until melted and drizzle over slice.
8. Keep slice in the fridge.

This month is National Mental Health Month 🦋 I’m going to take this opportunity to shine some light on the Gut-Brain Axis.

Have you ever experienced the feeling of butterflies in your tummy when you feel nervous? Or have you ever been in a situation where you felt ‘sick/nauseous’? There is a very good reason why we have these feelings. They are due to the Gut-Brain axis 🧠

The brain has a direct effect on the stomach and intestines and the gastrointestinal tract also has a direct effect on our brain and mental well-being.

The Gut-Brain Axis and the gut microbiome play a huge role in your health, well-being and behaviours. For example stress, anxiety and/or depression can actually alter our bowel habits and cause diarrhoea or constipation. We are very quick to blame the last meal or snack that we just ate for causing our sore or bloated tummies or the diarrhoea when in fact it could be due to stress/anxiety🧐

This bi-directional connection is evidence based and shows that a poor diet is directly related to our mental health and wellbeing.

However, we also know that a diet rich in fruits and vegetables, whole grains, lean protein and healthy fats has a very positive effect on our gut health and mental health 💙

Johns West Protein Plus Iron Tuna.

I’ll be honest I am a bit of a tuna snob and usually only get the Sirena Tuna BUT after seeing post the other day I thought why not give it a try.

It makes a GREAT snack or addition to a meal! It also tastes really good.

Chocolate & Cranberry Cookies 🍪

Hands up if you’re a little over the old banana bread baking in lockdown 🙋🏽‍♀️ well I have good news for you… These chocolate chip cranberry cookies are so delicious and definitely satisfy those afternoon sweet cravings.

To make them even better they literally only take 15 minutes to make!

Ingredients:

~ 1 1/4 cup almond meal
~ 1 egg
~ 1/4 cup peanut butter or biscoff or almond butter
~ 1/4 cup olive oil
~ Sea salt
~ 1/4 cup brown sugar
~ 1/2 tsp baking powder
~ 1/4 cup cranberries
~ 1/3 cup dark chocolate chips
~ 2 Tbsp milk

Method:
1. Preheat oven to 180 degrees, fan forced.
2. Place all dry ingredients into a bowl and mix.
3. Place all wet ingredients into a bowl and mix well to combine.
4. Add wet mixture to the dry ingredients and mix well. The mixture will be very sticky and wet (unusual for a cookie recipe but trust me)
5. Line a baking tray with baking paper and evenly distribute 1 Tbsp of mixture onto the tray.
6. Place in the oven and bake for 12-15 minutes or until lightly golden.
7. Enjoy!
