Iβve been making chai for a few years now from a range of difference spices, after drinking my way through northern India for 2 months after everyone at my workshops asking if I sell it Iβve decided to finally offer it to you all π€ This 11 spice chai tea contains the perfect balance between a pesticide-free black tea, cloves, green and black cardomom, ginger, cinnamon bark, anise, nutmeg, fennel seed, coriander seed and white and black pepper making it a super approachable chai with a gentle kick from the peppers and ginger. Chai tea has a range of health benefits; fennel does wonders for aiding digestion, ginger alleviates nausea, improving circulation delivering oxygen to our organs, and soothe the stomach as a natural anti-inflammatory (for an extra kick I recommend adding some fresh grated ginger to this tea). The pepper also helps the pancreas produce digestive enzymes, the list goes on!
I slow roast the spices in a sealed tray to release the oils and aromas and allow them to merge together, grind them by hand, adding in some pulverised spices as well to get the concentrated heart of the spices as well as those outer notes from the whole chunks. With each batch I will slowly add in the black tea while cupping to find the right balance then bottle for selling! βοΈ
