Did you know that just like us kombucha needs to breathe while it is brewing?

The acetic acid and bacteria which are key to kombucha requires lots of oxygen to grow! A steady flow of air across the surface of a kombucha brew help give kombucha its sharp tangy flavor which would be missing without oxygen. Kombucha Fermented with pore oxygen flow is less tangy and more alcoholic.

Kombucha, when made the good way, is unpasteurized and raw ✨Unpasteurised implies that it yet has all the good bacteria for our gut and hence if left outside the fridge will continue to ferment at room temperature. 🍾

We are so excited to announce that our Native Margarita Kombucha has won fist place in the Non Alcoholic Ready To Drink category. This is a project that we have been working on and refining for over a year now with the end product using our natural fermented process and has tasting nots from the South Australian bush for native citrus and botanicals, finished with a touch of macrobiotic salt. Native ingredients are blended with our living acidic tea (kombucha) to form a natural sparkle through traditional methods only. Naked Bondi’s passion is to craft Australia’s most authentic living natural Kombucha. Naked Bondi is real SCOBY-ing Kombucha.

After an encounter with a “friendly” Australian spider and an array of medication to follow we discovered the transformative world of “probiotics” and ‘gut health.” The health community of Bondi helped us discover real SCOBY-ing Kombucha and this proved to have a profound effect on not only our gut health but our overall well-being.
