Zucchini, Pea & Bacon Soup (makes 4 cups)
- Oil spray
- 1 onion, diced
- 1 garlic clove, crushed
- 175g short cut bacon, trimmed & chopped
- 2 cups zucchini, diced
- 1 cup frozen peas
- 2 cups salt reduced vegetable stock
- 1 tablespoon parmesan cheese
- Freshly ground black pepper
- 2 tablespoons (35g) high quality protein powder

Heat a saucepan that has been sprayed with oil.
Add onion, garlic and bacon, and cook, stirring for 10 minutes.
Add zucchini, peas and stock and bring to the boil.
Reduce heat and simmer, covered, for 20 minutes or until zucchini is tender.
Remove from heat and leave to cool slightly.
Add parmesan cheese and season with black pepper.
Pour soup into a blender or food processor and puree until soup is thin enough to drink through a thick straw.
Dissolve protein powder in one quarter of a cup of water and stir through soup.

Wishing everyone a Happy Valentine's Day 🌹
Bacon & Egg Muffins, which are high in protein and yummy to share with your valentine today.
Ingredients
• Non-stick cooking spray
• 9 large whole eggs
• 1/4 teaspoon kosher salt
• black pepper
• 3 strips cooked chopped bacon
• 3 tablespoons thawed frozen spinach, drained
• 3 tbsp diced tomatoes
• 3 tbsp diced onion
• 3 tbsp diced bell pepper
• 2 oz shredded cheddar
Instructions
• Preheat the oven to 350F. Spray the muffin tins with cooking spray.
• In a large bowl whisk the eggs, season with salt and pepper.
• Mix in the remaining ingredients.
• Fill and place tins on a cookie sheet and bake 20 to 25 minutes, until set.
Nutrition
• Serving: 2 omelets, Calories: 165 kcal, Carbohydrates: 2.5 g, Protein: 14 g, Fat: 11 g, Saturated Fat: 4.5 g, Cholesterol: 289 mg, Sodium: 267 mg
