Ok, not the best photo but I had to share this because it was SO delicious. And super easy to make. I threw some pepitas and a splash of olive oil in a pan and cooked them for a minute or so. Then added the pumpkin (I did conveniently have some roasted pumpkin all ready and waiting to be turned into risotto tomorrow). Once the pumpkin was warm I mixed it in a bowl with some feta. Easy peasy. Filling and delicious!
