Not really the right weather for soups in Sydney but Iāve been craving them this week whilst being run down. These are two of my favourite types, despite me not doing them justice in these photos. They are absolutely delicious and so nourishing š

š“Photo 1: Creamy chicken and veggie broth soup. Whole chicken boiled in a pot for 2hrs with carrots, zucchini, onion, garlic, sea salt and celery. I transferred all the veggies into a blender (apart from the celery and carrot), added spinach and butter with a little of the chicken broth and blended on high. So creamy tasting without the cream or any nasties š Iāve paid $18 for 500ml for the same tasting soup and I can easily make batches of it at home for a fraction of the price š
š“Photo 2: Chicken broth noodle soup. This I made with the leftover chicken broth. I simply placed rice noodles and broccoli into boiling water to sit for 10mins. I then reheated the broth in a saucepan and added the leftover chicken, carrot broccoli and noodles. Ready in a matter of minutes š
I still have leftover chicken for lunch and broth to store in the freezer.
There are so many benefits to drinking broth. It is so nourishing, rich in gelatin and collagen = ie making your skin and hair glow, helps build our immunity, helps with digestion, helps regulate the nervous system, helps build, maintain and repair our osteo-skeletal system and so much more.
