Nerikiri (練り切り) is a type of traditional Japanese confectionery, known as wagashi, often served with matcha during tea ceremonies.
It is made from a smooth dough of white bean paste (shiro-an) mixed with glutinous rice flour or gyuhi (a soft type of mochi). The dough is colored and carefully shaped by hand into seasonal motifs such as flowers, leaves, or animals.
Because of its delicate texture, elegant appearance, and subtle sweetness, nerikiri is considered one of the most artistic forms of Japanese sweets — almost like edible art.
