This guy, my hero, my partner in crime, my rock. He got a new job in London and in four weeks we move and start a whole new life in another country and culture.

The role is HUGE! He is undeniably the most tenacious, persistent and hard working man I have ever known. He’s like a Magician. Whatever he sets his mind on, he focuses on like nothing else and he gets it.

I am forever inspired and in awe, all the while, grateful to be along for the ride and part of the team that we are together.

I know, moving was not in the plan specifically. Yes, we just renovated the house and bought land, but life is like that.

His role, is to be announced on his platforms in a professional way, so I’ll leave that for there and he likes to be out of the social media spotlight and I respect that, but I can say that he is extremely entrepreneurial and is running a new global business from London and I am very proud!

Yes fat is good for you, but its not good for you to eat high fat all the time and when we honour nature, eating nose to tail practices and regenerative farming, we don’t always eat high fat.

If I was to grow my own animals to eat, which is the most environmentally friendly way to raise an animal, I would break down the animal and eat the entire animal.

Organ meats are the most nutrient dense part of an animal and because they breakdown the quickest, the animal would be gutted and the organ meats enjoyed first. They were always given to the newly married/joined couples for the knowledge of how vital they are to fertility.

Once upon a time, all the fat would be removed and rendered down to make tallow, which was used for cooking, soap, skin care, candles etc. So just like dairy, it was more likely that you would eat some lean meat because the fat was used for other things.

Some cuts of the animal would be high in fat. The less active parts like the ribs. Some cuts of the animal are low in fat, the more muscular and active parts of the animal like the filet or tenderloin. Other parts of the animal taste better when they have been hung to dry and age.

Plus we would not eat beef all the time, we would eat game meats which are much lower in fat by nature of running all day. Poultry like chickens have a lot of breast meat which is low in fat. Do you just throw your chicken breast away? I think if you were a hard working farmer, you wouldn’t throw anything away.

And as we discussed previously with dairy, it is quite a natural part of the process to have low fat milk as all the milk fat was used to make cream and butter. have low fat milk and cheese at a meal, also lowers your overall fat intake for that meal.

Recommended fat intake should be around 0.8g per kg of body fat, or 20% of total caloric intake and as we are omnivorous beings, eating a range of animal proteins will allow us to have more balanced ratios of fat to protein.

A few weeks ago, we went down the coast for a wedding. I was in a hurry getting work done as it was midweek. One of us would normally make us lunch, but we both forgot. So we pulled in to town and found a cafe that did a good old fashioned Reuben Sandwich on sourdough.

I sat there looking at this sandwich thinking about how I used to think that a sandwich was not a real meal, when actually, you can make it to the perfect macro meal.

Then I also thought about this mum at school telling me about all her food challenges and how they can’t go anywhere because of all the things she cannot eat or her holiday will be ruined. So they always go to Byron.

I know so many people like this. Going on a holiday literally gives them anxiety because of all the digestive issues they get if they leave the parameters of their protocol. Or they have to diet or cleanse when they get back to detox their system because they feel sluggish and constipated or whatever abnormal thing they experience.

Healing is not healing if it means you need to live in a box. It is not healing if it is constant rigidity. It is not healing if you have to cut out entire food groups.

I have actually healed so much, I can tolerate gluten again in small doses, especially in properly fermented sourdough, which is truly a gift when going out. I am all about the hunt for the perfect sourdough sandwich or pizza.

The whole point of healing, is to become more stress tolerant and to be able to enjoy life to the fullest. A true measure of health to me is being able to eat this sandwich and just love it.

I really enjoyed this sandwich. It just a fu***ng sandwich. So simple yet so satisfying.

I am seeing it more and more now. People who have been on a low carb diet or ketogenic diet and are now showing up as pre-diabetic, type 2 diabetic and/or with fatty liver disease. The truth is that this can happen in any kind of long term caloric restriction.

It can be a hard one to get out of, because most practitioners and doctors will tell you to cut carbs and sugar or fast or diet. Because they never look at food logs and meet you where you are at and to be honest, most of them just don’t understand basic nutrition science.

Glucose is our primary fuel source. Our body breaks itself down to make glucose. Even in ketosis, we still need glucose.

The weight you lose when you are low carb/keto is a lot of water, muscle glycogen and muscle loss. Yes you will lose fat the first time you go it, but repeatedly or over long term, this backfires and you have to go harder to lose the fat.

Just food for thought………

Ok, I said I was going to die on the hill of practitioners needing to check if people were eating enough before they put them on expensive protocols and sold them expensive supplements, but I will also die on this hill.

We should also be checking if people are meeting the RDI/RDAs recommended dietary intake.

It is non-invasive, cheap as chips and gives the power back to the client.

One of the things I talk a lot about with clients is, spending time to get to know yourself. And not just what ratio of glucose to fructose works best for you, but who are you?

Who are you without your health problem? Who are you without the title of parent, partner, lover, job, career etc?

What do you like to do for fun? What are your hobbies? What are your values?

In the initial stages, people literally do not have the energy to even think about this. I get that. But all too often, I see people’s health consume them and they miss out on the rest of their life.

So, for me……

I love music and have sung or played an instrument since I was 5 years old. I’ve been relearning the piano and finding my voice again after my TMJ rehab.Its amazing!

I’m part German (Lutz) and in an effort to learn about my family history, I learnt German and went on exchange to Munich when I was 15-16. I am nearly at 100 days straight on Duolingo

I also went to the VCA as my first university degree. I wanted to be an actor, but at the time there just weren’t any parts for non-white people so I went to my second love for a career. But I still LOVE to go to the theatre and read plays. I’ve been digging in to my old collection of scripts and re-reading. I used to collect them. I also love dance and ANY kind of live music from Opera to rock to House.

Unfortunately I had some musculoskeletal issues over the past 18 months, which are improving, but I am unable to snow board and horse ride, my two favourite sports and the ones Shanti loves too. My goals are actually about getting back into these sports in a big way.

I really enjoyed designing our renovation (the project management was more of a means to an end) but I love scouring for vintage pieces for our home and pouring over design mags and books.

I also love art and could spend my life, wondering around old cities and galleries. I am loving the new Art Gallery of NSW and still have not managed to see it all. I've joined the mailing list for lots of independent galleries too and this year I’m going to commit to going to more openings.

I love travel and am planning our next adventure.

If you talk to your doctor about why you can’t sleep, they’ll probably give you a sleeping tablet. If you talk to your functional or integrative doctor they’ll give you melatonin.

Sleep is a very natural thing to do. When we can’t to it, we need to look at why, not just bandaid with supplements. It is so often that people are not asked about, nor are they aware just how much energy it takes to sleep and in our “fat phobic, more energy out, less going in” culture, its getting worse and worse.

We truly take for granted, just how much work our body is doing to recover and just how much energy we need to do that.

You should wake up feeling rested. You should find it easy to fall asleep and stay asleep. You should have dreams and if you do get woken up, you should find it easy to fall back to sleep.

I am pretty slow to recommend supplements. If we look at blood tests and just apply a supplement for each thing that is missing, how is this different from a medical approach from applying a medication to every ailment?

Iron infusions have their down side. I know because I had many. Iron can then in fact become overloaded in the body and effect metabolism, especially in the way in which oxygen is delivered into the cell.

We often see low iron in states of stress, after blood loss, sickness etc. This is normal and it us up to us to refuel recover and replenish our body to bring it back to equilibrium.

Even with adding the foods in that I have suggested, to bring the body back in to balance, if there is not enough energy coming in, by way of calories, the body will still be stressed and still leach minerals.

There is nothing that grinds my gears more than hearing “you’re just not in a calorie deficit” when someone can’t lose weight. Well, relative to your BMR you might not be, but that’s not a good enough explanation.
