I’m currently working on my next cookbook Everyday Easy Vegan and testing recipes galore! Here’s one of my faves! Sweet Potato & Black Bean Quesadillas. For these you’ll need 4oz. (115g) plant based
cheddar cheese, shredded
10.5 oz. (300g) sweet
potato, cooked & mashed
(about 2 small sweet
potatoes)
10.5 oz. (300g) canned
black beans, drained
8 whole-wheat tortillas
8 tbsp. plant based Greek
yogurt, to serve
1 avocado, sliced, to serve
8 tbsp. salsa, to serve

Serves 4 25 Minutes
In a medium bowl, mix together the shredded cheese,
mashed sweet potato and black beans.
Heat a large nonstick skillet over medium heat. Place one
tortilla in the pan, warming for 20-30 seconds on each side
until soft.
Spread half of the cheese mixture over the tortilla, then top
with a second tortilla.
Press gently and cook until the bottom side is golden, about
1-2 minutes. Flip over and cook the other side for a further
2-3 minutes, until the cheese has melted.
Repeat this process with remaining tortillas and filling.
Slice and serve with yogurt, avocado and salsa.

Looking for a healthier twist on ? Try my salted date caramel. Perfect for drizzling on cakes, chocolate and cookies. Recipe here: Salted Date Caramel

16 medjool dates, pitted
1 tsp. vanilla extract
6-8 fl oz. (180-240ml)
unsweetened almond milk
Combine the dates, 1 teaspoon of sea salt, vanilla extract
and 6 fl oz. (180ml) of almond milk in a high speed blender or
food processor. Blend until the mixture is completely smooth.
If needed, add more almond milk, 1-2 tablespoons at a time,
to aid blending or achieve the desired caramel consistency.
Use immediately or store in the refrigerator to use later.
