🎄Christmas Roasted Carrots with Goat’s Cheese & Pomegranate

Long carrots, peeled and sliced lengthways, are gently tossed with olive oil, dried oregano, and a pinch of sea salt, then slow-roasted in the oven until tender, golden, and naturally sweet.

Served warm and finished with creamy goat’s cheese or feta, fresh basil leaves, and a scattering of jewel-like pomegranate seeds, this dish brings colour, freshness, and balance to the Christmas table.♥️

It’s Italian zeppole time — the true start of Christmas cooking in our home.
And just like that… Christmas cooking has begun. 🇮🇹✨

This Nonna zeppole recipe — is the one that signals the season, gathers everyone into the kitchen, and fills the house with memories.
Simple. Rustic. Made with hands, not measurements alone.✔️✔️✔️

✨ Nonna’s Italian Zeppole ✨

✨️Ingredients✨️

1 kg plain flour (I used organic wheat flour)

4 large potatoes, boiled (keep the cooking water)

3 tbsp yeast

2–3 tbsp salt *we tweaked to 1 TBS instead!

Olive oil, for frying

✨️Method✨️

1. Boil the potatoes and reserve the cooking water.

2. Mash the potatoes well, I used a potato ricer

3. In a large bowl, combine the flour, yeast, salt, mashed potatoes, and enough of the reserved potato water to form a semi-soft dough, similar to traditional Italian pizza dough.

4. Cover and allow the dough to rise for 3–4 hours.

5. Heat olive oil in a deep pan.

6. Using a spoon, take a small amount of dough and gently place it into the hot oil.

7. Fry until golden and fluffy.

🎈Optional Nonna touch:
Place a small anchovy in the centre of the dough and roll it into a ball, completely covering the anchovy.

Serving suggestion (Nonna-style):
For the plain zeppole, drizzle vincotto for a rich, traditional sweetness, or a little honey if you prefer something lighter. Both add a beautiful finishing touch and bring out the warmth of this festive treat.♥️

Golden and crisp on the outside, soft on the inside — and always made with love.✔️✔️✔️

🌟 A Christmas table is more than food — it’s connection. 🌿

With Christmas just around the corner, I’m sharing one of my absolute favourite festive salads — a family winner every single year.💃

This Freekeh Grain Salad, inspired by George Calombaris, is fresh, nourishing, vibrant in colour, and deeply satisfying. It’s the kind of dish that brings people together — grounding, wholesome, and made to be shared. ♥️

Food like this doesn’t just feed the body — it helps us slow down, connect, and truly nourish ourselves and those we love. ✨
It’s about creating a plate that allows us to thrive, not just through the festive season, but beyond it.

✨ Festive Freekeh Grain Salad 🎄🥗
(recipe below ⬇️)

✨ Ingredients ✨

1 cup cooked freekeh (follow packet instructions, then cool)

½ cup puy (black) lentils, cooked until just tender

2 tbsp pumpkin seeds, toasted

2 tbsp slivered almonds, toasted

2 tbsp pine nuts, toasted

½ bunch fresh coriander, chopped

½ bunch fresh parsley, chopped

½ red onion, finely chopped

2 tbsp capers, drained

½ cup currants

Juice of 1 lemon

3 tbsp olive oil

✨ Yogurt Dressing ✨

1 cup Greek yogurt

1 tsp ground cumin

1 tbsp honey

Seeds of 1 pomegranate

✨ Method ✨

1. Cook freekeh according to packet instructions. Allow to cool completely.

2. Cook lentils until just tender. Drain and cool.

3. Toast pumpkin seeds, almonds, and pine nuts until lightly golden. Set aside to cool.

4. In a large bowl, combine freekeh, lentils, toasted nuts and seeds, herbs, onion, capers, currants, lemon juice, and olive oil.

5. In a separate bowl, mix Greek yogurt, cumin, and honey until smooth.

6. Drizzle dressing over the salad and gently toss to combine.

7. Top with pomegranate seeds just before serving.

Hi everyone,
I’ve been very quiet on social media lately. Life has been a lot — supporting my elderly parents through their health challenges, navigating my own health while moving through a stage of burnout, and then the shocking loss of my brother. I’m also recovering from carpal tunnel surgery, along with trigger thumb, tendonitis, and arthritis — so my body has really been asking me to slow down.

With everything happening at once, I made the choice to step back and care for myself. Slowing down has never been easy for me — those who know me know I’m always on the go, always fixing, helping, or doing something. Learning to pause has been one of the hardest lessons.

But in the stillness, there has been a blessing. I’ve spent more time in nature, where I truly thrive. Nature is where I feel alive, grounded, and connected. It’s where I breathe, heal, and find inner peace and calm amidst the storms around me.

Finding inner peace takes energy, intention, and presence — and that’s the journey I’ve been walking quietly.

Thank you to everyone who has reached out, checked in, or held space for me during this time. Your kindness has meant more than you know. ♥️

And if you’re moving through your own storm, please remember — it’s okay to slow down, honour your body, and choose rest. Healing isn’t linear, and you’re allowed to take up space in your own journey.

I’m back at work next week and will finish up for the Christmas break on the 19th of December. I’ll reopen on the 6th of January.

This weekend I spent quiet time in the garden — my little sanctuary of peace. Life has felt like an emotional rollercoaster lately, and being surrounded by nature gives me the space to slow down, breathe, and reconnect with myself. 🌿

Lately, I’ve been turning inward, gently exploring unresolved emotions and allowing myself to feel what needs to be felt. Even when it feels lonely at times, this quiet reflection nourishes my soul and brings a deep sense of calm and clarity. 🌸

💫 A fresh start begins from within! 💫

What an incredible week it’s been with our "Vitality Cleanse Workshop"! ✨

Together, we connected deeply — learning how the body truly works, understanding why we need to cleanse, and uncovering how to make each system function more efficiently. 🌿

We explored how toxins quietly affect our lives and how nourishing whole foods can support metabolism, liver detoxification, and renewed energy.
