Family Christmas traditions are great but why not add some more quality time to your 2025 plans? What about a backyard movie night, or creating a family time-capsule, or a family adventure day? Or what about instituting “The Great Pavlova Challenge”? This tasty, dairy-free topping recipe uses the best of Aussie summer fruits and gives you a little head start 😉:
🥥1 can (400ml) chilled coconut cream
🍬🍬2 tablespoons powdered icing sugar
🌱1 teaspoon vanilla extract
🥭🥭2 ripe mangoes, sliced
🍓🍓2 cups strawberries, hulled and halved
🥝1 cup kiwifruit, sliced
🍈Fresh passionfruit, to taste
🌿Mint leaves, for garnish
Scoop chilled coconut cream from the can (discarding the liquid) and whip it in a bowl with icing sugar and vanilla extract until smooth and creamy. Add fruit, drizzle fresh passionfruit, and scatter mint leaves.
