Raspberry, Lime and Coconutty Delight

Ingredients
2 cups frozen raspberries
Zest and juice of 1 lime
1/2 cup organic cashews, soaked and rinsed
2 tablespoons organic coconut oil
2 cups organic coconut milk
2 tablespoons organic coconut syrup
Fresh raspberries to serve
Shredded coconut to serve, option

Method
Pop the raspberries, lime zest (reserving a little for your garnish), lime juice, cashews, coconut oil, coconut milk and coconut nector into your blender & process for about 60 seconds.
Check the consistency, and add water if you want it a bit thinner.
Pour into glasses (or bowls) and top with fresh berries, shredded coconut and the reserved lime zest. It looks super pretty!

Peanut Butter Cups

Ingredients
200g Organic Dark Chocolate Drops
30g Organic Virgin Coconut Oil
1 tsp vanilla extract
125g Organic Smooth Peanut Butter
40g Organic Icing Sugar
Flaky Salt

Method
Place the peanut butter in a bowl. Sieve in the icing sugar. Use a spoon or spatula to combine both ingredients into a paste. This will take a few minutes to come together.
Once the mixture has come together, roll in balls and flatten slightly to create thick disks. Set aside.
Use a microwave or a double boiler to melt together the dark chocolate and coconut oil. Add the vanilla extract.
Grab your moulds. Place a tsp or tablespoon of melted chocolate in each mould. Place your peanut butter disk, then cover with the remaining melted chocolate.
Place in the freezer for 20 minutes to set.
Remove the cups from the freezer and take them off the moulds. Drizzle any remaining melted chocolate on top and add a touch of flaky sea salt on top. Place back in freezer to set.
Once your cups are set, you’ll need to keep them in the fridge to avoid melting.
