I studied WFPB Nutrition with CNS & eCornell, and Holistic Health & Habit Change Coaching at HCI, and set off with nothing but a desire to help others become their healthiest and leanest selves too. I then added a Life Coaching to string to the bow, to help people navigate life's challenges without interrupting their health & weight loss goals. I'm also a Medical Intuitive in training.

𝘾𝙝𝙞𝙥𝙤𝙩𝙡𝙚 𝙟𝙖𝙘𝙠𝙛𝙧𝙪𝙞𝙩 & 𝙗𝙡𝙖𝙘𝙠 𝙗𝙚𝙖𝙣 𝙗𝙤𝙬𝙡 𝙬𝙞𝙩𝙝 𝙨𝙥𝙞𝙣𝙖𝙘𝙝 𝙢𝙖𝙣𝙜𝙤 𝙘𝙝𝙪𝙩𝙣𝙚𝙮.⁣

I don’t often post recipes because I eat much of the same recipes from my 28 day meal plan.⁣

But I do love to branch out and create some new ideas once in a while.⁣

This one is delish!⁣

𝘽𝙀𝘼𝙉𝙎/𝙅𝘼𝘾𝙆𝙁𝙍𝙐𝙄𝙏⁣

1 red capsicum, chopped⁣
(You can also add 1 onion chopped but I forgot to buy one)⁣
2-3 cloves garlic, crushed ⁣
1 large zucchini, grated⁣
1 large carrot, grated⁣
1 tin black beans ⁣
1 tin jackfruit⁣
2-3 spoons of chipotle in adobe sauce⁣
Large handful chopped coriander⁣

Brown capsicum (& onion) in a fry pan until browned…⁣

Add 1/4 cup water to deglaze and mix in.⁣

Add another 1/4 up and add the zucchini, carrot & garlic.⁣

Cook until all softened, then add the beans, jackfruit & chipotle sauce.⁣

Cook until heated through and mix the coriander in at the end.⁣

𝙈𝘼𝙉𝙂𝙊 𝙎𝘼𝙇𝙎𝘼⁣

2 mangos, diced⁣
1/4 red onion, finely chopped⁣
1 avocado, chopped⁣
3-4 chopped cherry tomatoes⁣
Handful chopped coriander⁣
1-2 tsp (or so) white balsamic vinegar ⁣
1 tbsp (or so) lime juice⁣
1//2 tsp chilli paste, chilli sauce or a pinch of chilli flakes⁣

Add all ingredients to a bowl or container & mix well.⁣

Adjust seasonings to taste.⁣

Serve beans & jackfruit with some brown rice (if desired), top with the salsa and a dollop of cashew cream (if desired)⁣

Thank goodness she didnt let that number dictate her thoughts, emotions and actions…

Just saw a Facebook ad for a “revolutionary” belt called Nomend.⁣

Apparently, it promises your belly fat will never come back.⁣

🤣 Cute.⁣

Here’s your daily reminder:⁣

One of the 5 deadly FUDS (Fcked Up Dumb S*t) keeping you stuck is Shiny Object Syndrome -⁣

the constant chase for the next thing that will “finally work.”⁣

👉 The belt.⁣
👉 The gummies.⁣
👉 The detox tea.⁣
👉 The waist trainer.⁣
👉 The fat blaster pills.⁣
👉 The $200 magic supplement that’s “clinically proven” (translation: sponsored study on three people).⁣

(𝘐 𝘬𝘯𝘰𝘸, 𝘵𝘩𝘪𝘴 𝘸𝘢𝘴 𝘮𝘦 𝟸𝟻 𝘺𝘦𝘢𝘳𝘴 𝘢𝘨𝘰 𝘢𝘵 𝘵𝘩𝘦 𝘩𝘦𝘪𝘨𝘩𝘵 𝘰𝘧 𝘮𝘺 𝘰𝘸𝘯 𝘸𝘦𝘪𝘨𝘩𝘵 𝘴𝘵𝘳𝘶𝘨𝘨𝘭𝘦)⁣

These things are designed to prey on your frustration - not fix it.⁣

You need boring consistency.⁣

💚 Real meals built around calorie density.⁣
💚 Water, sleep, movement, repetition.⁣
💚 Learning how to eat and live like the person who already lives at a healthy weight.⁣

Those are the habits that actually change your body.⁣

They just don’t come in a box with a 30-day refund policy.⁣

What do plant based weight loss coaches eat for breaky in Bali?

PS: If your nutrition education comes from TikTok bros saying “gluconeogenesis” like it’s a Hogwarts spell… maybe sit this round out.⁣

No, your body 𝘱𝘳𝘦𝘧𝘦𝘳𝘴 glucose… CARBS.⁣

Yes, it can survive on ketones. ⁣

That’s called a 𝘣𝘢𝘤𝘬𝘶𝘱 𝘱𝘭𝘢𝘯, not a flex.⁣

And if someone can’t explain the mechanism - and only shouts “insulin = bad!” - that’s your cue to scroll. 💅⁣

𝟯 𝗿𝘂𝗹𝗲𝘀 𝗳𝗼𝗿 𝗻𝗼𝘁 𝘄𝗿𝗲𝗰𝗸𝗶𝗻𝗴 𝘆𝗼𝘂𝗿 𝗵𝗲𝗮𝗹𝘁𝗵:⁣

Symptom relief isn’t the same as long-term health. ⁣

If they can’t explain how it works (without fear-mongering normal biology), they don’t know.⁣

Pass.⁣

I used to believe that to lose weight, I had to be 𝘱𝘦𝘳𝘧𝘦𝘤𝘵 to be successful.⁣

Perfect plan.⁣
Perfect execution.⁣
Perfect results.⁣

If I followed the plan to a T, I’d finally be successful.⁣

If I was successful, I’d finally be proud of myself.⁣

And if I was successful, maybe I’d finally be enough.⁣

That was the old programming running the show.⁣

The childhood belief that love and worthiness had to be 𝘦𝘢𝘳𝘯𝘦𝘥 through achievement and perfection.⁣

But weight loss doesn’t work like that.⁣
And neither does life.⁣

Because here’s the truth your brain doesn’t want to hear 👇⁣

Your brain 𝘩𝘢𝘵𝘦𝘴 massive change.⁣
It sees big change as unsafe - even if it’s positive.⁣

When you overhaul everything at once, your brain panics.⁣

😩 It triggers your stress response.⁣
😩 Floods you with resistance.⁣
😩 Pushes you back toward old, “safe” habits.⁣

It’s biology - not lack of willpower.⁣

Your nervous system is wired to seek familiarity, not success.⁣

That’s why you keep starting strong, white-knuckling your way through a perfect plan…⁣

then “falling off” and promising to start again Monday.⁣

That stop-start cycle isn’t proof that you’re lazy or unmotivated.⁣

It’s proof that you’re trying to change too much, too fast.⁣

Because real transformation isn’t about 𝘱𝘦𝘳𝘧𝘦𝘤𝘵 execution.⁣

It’s about 𝘤𝘰𝘯𝘴𝘪𝘴𝘵𝘦𝘯𝘵 𝘥𝘪𝘳𝘦𝘤𝘵𝘪𝘰𝘯.⁣

Small, frequent course corrections that feel safe to your brain build trust, momentum, and automation - the stuff lasting change is made of.⁣

And here’s the other thing most people miss…⁣

Life doesn’t stop because you’ve decided to eat better.⁣

You’ll still have stress.⁣
You’ll still have emotions.⁣
You’ll still have chaos.⁣

If your plan only works when life is calm - it’s not a real plan.⁣

Sustainable weight loss requires a new strategy.⁣

One that lets you move 𝘵𝘩𝘳𝘰𝘶𝘨𝘩 life’s mess without abandoning yourself every time things get hard.⁣

Because consistency isn’t built in the easy weeks - it’s built in the hard ones.⁣

It’s not the stopping that ruins your progress…⁣

It’s the 𝘴𝘵𝘢𝘳𝘵𝘪𝘯𝘨 𝘰𝘷𝘦𝘳.⁣

Every restart kills your momentum and resets your belief in yourself back to zero.⁣

So stop waiting to be perfect.⁣
Start being consistent.⁣

Make small, directional changes, over and over.⁣

Because that’s how you rewire your brain.⁣
That’s how you build momentum.⁣
That’s how you win.⁣

No more starting again Monday.⁣
Just steady, powerful forward motion.⁣

Six years ago today I made a f*cking scary leap.

I quit the job that looked “successful” on paper but was killing me.

The stress killing my nervous system.

The pressure to hold it all together, while dying inside, hating my life and feeling trapped.

The Sunday-night dread that crept in every week.

My back tightening as soon as I started the morning commute.

Deep down, I knew I was trading my health for a steady paycheck.

Then one day my dear friend Nicole asked me for advice about going vegan.

She said “you should be a vegan coach, youre good at this!”

And suddenly the black depressive clouds around my head parted… and the sun shone through.

THAT WAS IT!

THAT was my path forward…!

Not just a “way out of hell”, but a meaningful path towards a life that would bring PURPOSE and CREATIVITY, and truly allow me to HELP people.

So I leapt right then, no hestation.

I enrolled in the T. Colin Campbell Center for Nutrition Studies Plant Based Nutrition Certification, and started the journey with nothing but a dream.

I didn’t have a plan.
I had a pull.

Because when you finally allow yourself to imagine what you truly want…

the universe starts sending you directions.

But it won’t hold your hand.
It’ll give you two choices:

🫣 Stay safe in the familiar hell that’s slowly shrinking you…
or
🔥 Leap into the unknown, where your expansion lives.

I chose the leap.

Six years later, it’s still one of the best decisions I’ve ever made.

The places I’ve been, the people I’ve met..,

From amazing clients and other coaches around the world, to the plant based heroes we all love and admire.

Scary doesn’t = don’t do it… scary means evolution = do it.

It means your soul is stretching you into more of who you came here to be.

Comfort isn’t safety.

It’s the slow suffocation of potential.

It’s the velvet-lined cage that feels soft… until you realise you’re stuck inside it.

So if you’re standing at that edge right now, wondering if you should jump…
remember this:

The leap doesn’t get easier.
You just get stronger.

And on the other side of fear…
is a life you once only dreamed about.

This was a fun day in Bali at Taman Dukuh Cooking School.

Organic farm 👉🏻 table cooking experience.

and I got to cook some amazing vegan Balinese recipes.

We started at a local fruit & veg market, then picked ingredients from the farm onsite…

Prepped, cooked and ate one course at a time.

When my Bali Belly is fully recovered, I’m going to see if I can recreate the magic again.

About Me & My Coaching

I started The Plant Power Coach in January 2020 with a burning desire to help other women discover the same health and weight loss benefits that I’d discovered when I first went Plant Powered.

I was always ‘pretty healthy’... My mother raised us on a whole foods diet, with most foods we ate being home made, whole food, low in sugar, low in processed foods and low in ‘junk’.

I gave up eating meat in 1994, as I was a passionate animal lover and never really liked the taste anyway. I was vegan for a few years, but after burn out from animal rights activism I drifted back to dairy and eggs again, ignoring my morals in favour of ease of eating.

I still ate what I thought was a healthy vegetarian diet, lots of fresh foods, I cooked most of my own meals from scratch... but I still ate plenty of dairy, cheese and eggs!
