Happy Father's Day to My Dad (who is having a grand time in Europe!) and to all Dads and Father figures!

My Dad loves food and cooking, coming from a traditional Greek family where cooking meals was a daily thing and eating together was important.

He taught us lots of other things, like riding a bike, skiing, driving and fixing things. He used to drive around and fix people's TV's, videos, DVD's and microwaves for work. Sometimes I feel like I followed in his footsteps driving around and helping people with their eating.

Can't wait to celebrate when you get back!

ROASTED CHICKPEA SALAD

With the weather only starting to warm up and lettuce a plenty in the garden, have a go at this salad with a warm, crunchy twist which is guaranteed to fill you up and give you that long lasting energy.

Serves 2

- 1 can of chickpeas (375g)
- 1 cup wom bok cabbage or salad greens of choice
- 1 cup corn
- 1/2 cup cherry tomatoes - quartered
- 1/2 cucumber - diced
- 1/2 cup beetroot (canned) or boiled/roasted, diced 1.5cm size
- 1/2 avocado diced 1.5cm size
- 1 shallott- finely sliced
- 1 clove of garlic, minced/finely diced
- Fresh herbs of choice (from the garden): eg 2 Tb parsley, chives, rosemary, sage
- 2 Tb Extra Virgin Olive Oil
- Juice from 1/2 lemon
- Pinch of salt


Instructions:

1. Preheat the oven to 180°C.
2. Chop up the herbs pf your choice and add to a baking tray with the crushed garlic, pinch of salt and 1 Tb oil.
3. Drain and rinse the chickpeas and add to the pan.
4. Stir the chickpeas to coat in the oil and your fresh flavours.
5. Place in the oven for 40 minutes. Stir after 30 minutes to ensure the chickpeas are browning evenly.
6. Chop up the salad ingredients, place in a bowl and stir.
7. Make the dressing: mix the oil (2TB), any other herbs you desire, pinch of salt and lemon juice. Add more or less as desired.
8. When the chickpeas are crunchy, remove from the oven to cool a little before topping onto your salad and stiring together with the dressing.

Babies do not need 'baby food'. That is clever marketting.

Parents do need to change their food choices to eat the same foods and role model eating foods they want their bubs to eat. Most babies do not need to eat puree, mashed is usually fine to start, just like in hunter gatherer days where it was pre-chewed.

Some people choose to buy store bought 'baby foods' for convienience and they should be legislated better. Please sign if you agree.

Parents should be able to pick up any baby or toddler snack at the supermarket and trust it’s healthy.

They should also be able to trust the marketing on the pack isn’t misleading. It's a no-brainer, right?

But right now, there are too few rules in Australia around how these foods are made and marketed — and our kids' health is paying the price.
