Step by step photos of my homemade, fermented Chilli Sauce.

1. De-seed the chilli (about 30 decent sized chillis), wash and place in a sterilised jar with some brine (Salt and Boiling water).

2. Cover rhe chilli loosely with the lid and leave in a dark place for 1 week, checking daily and pressing the Chilli peppers back under the water. Ideally do this a few times a day and place a plate underneath as it will likely spill over as it ferments.

2. Once well fermented, strain the Chilli but keep some of the Brine.

3. Place the Chilli back into a clean jar that has an opening big enough to fit a stick blender.

4. I added ½ a Teaspoon of Cumin, ¼ Teaspoon ground Coriander, 2 large garlic cloves. ¼ Cup of Vinegar, Salt, 2 Tablespoons Sugar, a pinch of MSG, 1 Teaspoon of Kecap Manis and 2 Tablespoons of Tomato sauce and a few Tablespoons of brine at a time.

5. Blend thoroughly, adding more brine as needed, tasting and balancing the flavour with more sugar, salt and Vinegar until you get to a flavour you are pleased with.

Enjoy this for the next 3-6 months straight from the fridge. ;) 🌶

Tonight's Anzac dinner is a strange concoction of flavours.

I mixed some roasted Eggplant flesh together with some cottage cheese, Za'atar spice and pomegranate molasses.

I served this with some veggies, a burger patty and sausages.

Total calories were about 511 calories so still less than 1 Big Mac. 🤣

Thanks to Sensei for all your support and knowledge over the last 2.5 years!!

My only regret was not restarting my martial arts career years ago. The cost of pride and ego, I suppose. 🤣🤣🤣

But it's never too late to follow your dreams and passions! Remember that!!

🤔 Watching My 600-lb Life with my wife (her guilty pleasure, not mine, I swear) has me in my feelings and my thoughts.

As someone who’s wrestled with weight and danced with addiction most of my life, I get it!!

The mental tug-of-war with food is REAL.

That voice whispering, “Just one more bite” is louder than a stadium full of fans. 🍔📣

But here’s where I’m stumped: I’ve clawed my way out of some dark addiction holes—cigarettes, booze, drugs, food, you name it.

So how do some folks let it spiral so far? No shade, just genuine curiosity.

Is it the food?

The shame?

The system?

I mean, I’ve had my moments of weakness, but 600 pounds?! That’s a whole other level of “I’ll start my diet tomorrow.” 😅

Anyone else watch this show and wonder what flips the switch, or doesn’t?

Drop your thoughts below, and let’s keep it kind. We’ve all got our battles, and I’m just trying to understand this one. 💪
