I remember eating this carrot cake at a quaint café in Kirkcaldy , Scotland when the café owner turned on the radio and instantly “Somewhere over the rainbow “ came on . It was a message from my passed over dad whom I have a rainbow connection with . It was the last song I played to him an hour before his passing . Love you dad 🌈🌈
