Greetings from Scotland!
Gosh hasn't this year absolutely flown by! I have been privileged to spend this year travelling throughout different parts of the world learning how food and medicine is grown by their custodians.
These last few months we have been embracing the Scottish winter, by walking through mossy Scottish forests, diving headfirst into designing permaculture systems for a hobby farm and resting by a crackling fire.
Harry and I have been embracing organic farm life and have been learning different techniques of fermentation. We learnt to make sauerkraut in the Netherlands. We have been making sourdough in Scotland as well as concocting kombucha and ginger bug ferments to warm ourselves internally for an energy boost through the cooler months.
Being involved in many Permaculture gardens has shown and taught me about how creating resilient and self-sustaining food systems to produce nourishing whole foods and healthy animals is integral to supporting our social, physical and mental health.
I've enjoyed seeing all the different types of herbal medicine people grow- (sometimes not intentionally!) as many surprising fruits, berries and leaves have a therapeutic effect in Chinese Medicine.
This year I have been able to think about how we can cultivate ideal long term health prospects through better food quality, fostering a life of movement and connection with nature and people in our community. I am so thankful for this period of life experience which I can bring back to share with you.
There has been so much devastation worldwide this year and it has been hard not being a part of your support system and an active part of our wider Wollongong community. Hold your loved ones close and look out for those vulnerable around you as we all benefit from helping one another.
I don't have a date as of yet that I will be back in clinic, however I will post when my books are open, where I so look forward to seeing you again.
