Keen to healthy-up your snacks? These Hazelnut and Quinoa Spiced Cookies are gluten-free and contain nuts (a great source of omega-3 fatty acids) and quinoa (protein and fibre galore). Plus, the addition of spices gives them a wonderful flavour and a healthy addition to what is already a fantastic guilt-free treat. What’s not to love? ❤️
INGREDIENTS
✅ 140g chilled butter 🧈
✅ 70g quinoa flakes
✅ 180g tapioca flour or arrowroot starch
✅ 100g hazelnut meal (or you could do almond meal if you prefer)
✅ 100g of panela or rapadura sugar
✅ 2 heaped teaspoons of ground ginger
✅ 1/4 teaspoon ground cardamom
✅ 1 teaspoon ground cinnamon
✅ 1/2 teaspoon ground vanilla bean or vanilla paste
✅ 1/2 teaspoon baking powder
✅ 1 egg, lightly beaten
INSTRUCTIONS
✅ Preheat your oven to 190ºC and line a baking tray with baking paper.
✅ Place the butter, quinoa flakes, tapioca/arrowroot, hazelnut meal, sugar, spices and baking powder into a food processor and pulse until combined. Then add the egg until it comes together as a dough. Add a tablespoon of olive oil if the mixture is a little on the crumbly side.
✅ Roll walnut-sized balls, then them flatten gently on a baking tray lined with baking paper.
✅ Bake for 15 to 25 minutes. Cooking time will depend on the size of the balls, but you’ll know when they’re ready as they’ll be a lovely golden colour.
