Today, I taught my nephew how to make delicious GF pancakes.
He was very skeptical and was almost about to ditch the idea completely!! But once I convinced him to continue, and he'd finished eating them, he said they were some of the best he ever had!
Here's the recipe:
1 Egg
1/2 cup Corn starch
1/2 cup Rice flour
1.5c Milk of choice
1tsp Xanthan gum
1.5tsp Baking powder
1/2tsp Sea salt
2tsp Vanilla
2tsp Vinegar
Whisk. Cook and serve with pure grass fed butter and 100% Canadian maple syrup!!
THEN he asked me about fats, and if they were BAD for us! So, he listened intently as I drew him a diagram and a list of WHY FATS ARE SO IMPORTANT, and the best types to eat! He already knew to avoid margarine and regularly fried foods because of the canola oil and other 'vegetable oils'...which aren't actually vegetable oils, by the way.
Corn, soy, and rapeseed (canola) are some of the most heavily subsidised crops in the U.S. and other countries. This led to a surplus of these crops, prompting industries to find uses for them, including extracting oil.
These oils are inexpensive to produce at scale, making them appealing to food manufacturers looking to cut costs.
In the mid-20th century, animal fats were demonised as unhealthy, and margarineβmade from hydrogenated vegetable oilsβwas marketed as a heart-healthy alternative to butter. Absolute con.
The American Heart Association and other health organisations promoted polyunsaturated fats (found in these oils) as better for heart health, based on studies funded by industrial interests! Total bias and profit producer.
By calling these products "vegetable oils," they were framed as natural and plant-based, which many consumers equated with health. Food labeling can so easily deceive!
In the 1950s, research by Ancel Keys popularised the idea that saturated fats caused heart disease, though this research has been criticised for cherry-picking data, and, again, being used for alterior motives. These dietary guidelines led to a major increase in the consumption of vegetable oils and allowed for huge profit and funding bias.
Today, the narrative is shifting as people find the truth and return to the old ways!!
