Cheeseboro Kitchens™ is excited to restock inventory of all of our Sand™ Seasonings, introducing our new Mickelberg’s Hot Salt, and finally launching our full line of *Black Label* seasonings.

The same thought, care, skill, acumen, and testing that go into making our uniquely flavored signature Sands seasonings is the same that we apply to making flavorful versions of already well-established international spice mixes, including Jerk, Adobo, 6-Spice (a leveled-up 5-spice mix), Curry, and our Crab-Plus (think Old Bay), which was used to make this aromatically inviting and delicious seafood rice dish which included salmon, tuna, squid, shrimp, clam, mussels, and anchovies.

The complete lines of Cheeseboro Kitchens™ seasonings and spice mixes should begin to become available starting in February. Stay tuned as we look forward to keeping you updated on those developments.

My friend Elaine, who’s visiting me in Barbados, was finally able today to get to a local Barbadian fish market a procured us a nice block of island-fresh tuna which I promised I’d show her how to make a version of tuna tartare.

I always like to respect the protein and for the tartare I did a medium small dice of the tuna with just a drop or two each of soy sauce and sesame oil and tossed in a ceramic bowl with chopped scallion (chives). With it I made a serving sauce of mayo, fresh squeezed lime juice, wasabi powder, white pepper, and ginger.

I threw the tartare mix in the freezer for a few minutes, stirring once during, because I like how fatty parts of the tuna, having smoke up a little of the soy and sesame flavors, then melt silkily over the tongue from the natural heat of my mouth. Serving the tartare on plantain chips and crackers added an always welcome second textural element.

We only used half the pictured slab of tuna for the meal-for-two portion of the tartare. I have some ideas what to do with the remainder of it, so far thinking I might do a jerk-seasoned sear on one side and then slice for a novel take on en Eggs Benedict-type of dish.

Stirring in leftover Bajan Cherry sauce reduction into chocolate cake batter (with a bit of orange zest) made for a extra moist, robustly flavored dessert goodness — especially a slice of it lounging in ever more of the cherry sweet sauce.

I still have a scant but left of the Bajan cherry sauce, which I think I'll use in a compound butter, to spread over waffles one morning. We'll see ....
