Ingredients:1 can (15 oz) chickpeas, drained and rinsed1/2 cup chopped cucumber1/2 cup chopped cherry tomatoes1/4 cup crumbled feta cheese (optional)1/4 cup chopped red onion2 tablespoons chopped fresh parsley2 tablespoons olive oil1 tablespoon lemon juice1/2 teaspoon dried oreganoSalt and pepper to taste2 whole wheat pita breads

Instructions:

Ingredients:
- 1 cup quinoa
- 2 cups water
- 1/2 cucumber, diced
- 1 bell pepper, diced

- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh mint, chopped
- 1/4 cup olive oil
- Juice of 1 lemon
- 1 garlic clove, minced
- Salt and pepper to taste
- Optional: 1/4 cup feta cheese, crumbled
- Optional: 1/4 cup pitted Kalamata olives, halved

Instructions:
1. Rinse the quinoa under cold water until the water runs clear.
2. In a medium saucepan, bring 2 cups of water to a boil. Add the quinoa, reduce heat to low, cover, and simmer for 15 minutes or until the water is absorbed.
