Here's a unique and healthy lunch recipe for a refreshing Quinoa Salad with Lemon Herb Dressing:
Ingredients:
- 1 cup quinoa
- 2 cups water
- 1/2 cucumber, diced
- 1 bell pepper, diced
- 1/4 red onion, finely chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh mint, chopped
- 1/4 cup olive oil
- Juice of 1 lemon
- 1 garlic clove, minced
- Salt and pepper to taste
- Optional: 1/4 cup feta cheese, crumbled
- Optional: 1/4 cup pitted Kalamata olives, halved
Instructions:
1. Rinse the quinoa under cold water until the water runs clear.
2. In a medium saucepan, bring 2 cups of water to a boil. Add the quinoa, reduce heat to low, cover, and simmer for 15 minutes or until the water is absorbed.
3. Remove from heat and let it stand for 5 minutes, then fluff with a fork and allow to cool.
4. In a large bowl, combine the cooled quinoa, cucumber, bell pepper, red onion, parsley, and mint.
5. In a small bowl, whisk together the olive oil, lemon juice, minced garlic, salt, and pepper to create the dressing.
6. Pour the dressing over the salad and toss to combine.
7. If using, sprinkle feta cheese and Kalamata olives on top.
8. Serve chilled or at room temperature.
