🍋 Fusion Terminal R&D Update đŸ§Ē

At Fusion Terminal, we love experimenting with food preservation techniques—and there’s no better time than now, when nature is bursting with seasonal bounty.

Of course, that also means more work for us. But honestly? We thrive on it. 😊

Today’s experiment: Mango Jam. đŸĨ­

As with all our products, we challenged ourselves to make it completely natural and free of preservatives. And though this was our first attempt, we’re pretty pleased with how it turned out.

But we didn’t just want to stop at making it—we wanted to share a bit of what we learned, too.

🔍 Why This Matters
Every year in Bangladesh, 25–30% of harvested mangoes go to waste due to lack of proper post-harvest handling and preservation infrastructure. That’s thousands of tons of fresh fruit lost—fruit that could be turned into delicious, long-lasting products like jam, chutney, or puree.

We believe small-batch preservation is one way to tackle this.

đŸ§Ē Behind the Jam: What We Learned
Here are a few key things we thought we would share about the process:

1ī¸âƒŖ Pectin Matters – Pectin is the natural substance in fruit that helps jam “set.” While many use store-bought pectin, we explored fruits like apple, lemon, and orange that can naturally boost pectin content.

2ī¸âƒŖ The Setting Point – This is when the jam is “done.” We test it by placing a spoonful on a chilled plate. If it wrinkles when pushed, it’s ready to jar.

3ī¸âƒŖ Sterilizing Jars – Crucial for shelf life and safety. We boil our jars and lids for 10 minutes after washing them thoroughly with hot, soapy water.

4ī¸âƒŖ Temperature Before Bottling – Letting the jam cool to near room temperature before bottling helps avoid condensation under the lid, which can reduce shelf life.

5ī¸âƒŖ Bonus Tip: The Splatter Rage – As the mango thickens into jam, it starts to splatter sticky hot lava in every direction. To avoid burns (and cleaning nightmares), we recommend using a deep, heavy-bottomed pot to contain the chaos.

đŸ“Ļ Today’s Batch:

We bottled this test batch in 200g and 400g jars.

Next up: naming the product, designing the label, and getting regulatory approvals.

But since mango season won’t last forever, we’re doing a limited run of made-to-order jars for anyone eager to taste our very first jam.

An eco-friendly food initiative focused on utilizing quality local ingredients and bringing authentic local and global flavors to our clientele.

We have been in operation since 2017 and we currently offer nine gourmet pickles, two infused chili oils and four premium spices. We also do exclusive seasonal offering such as sun dried tomato in extra virgin olive oil.

All our recipes have been researched and devised by our founder who is an avid food enthusiast and self-taught hobby chef.

One of the unique aspects of all our recipes is that none of them use any chemical or industrial preservatives or stabilizers. We use natural and food ingredient based preservation techniques that give all our products shelf-lives upwards of two years.
