At Fusion Terminal, we love experimenting with food preservation techniquesâand thereâs no better time than now, when nature is bursting with seasonal bounty.
Of course, that also means more work for us. But honestly? We thrive on it. đ
Todayâs experiment: Mango Jam. đĨ
As with all our products, we challenged ourselves to make it completely natural and free of preservatives. And though this was our first attempt, weâre pretty pleased with how it turned out.
But we didnât just want to stop at making itâwe wanted to share a bit of what we learned, too.
đ Why This Matters
Every year in Bangladesh, 25â30% of harvested mangoes go to waste due to lack of proper post-harvest handling and preservation infrastructure. Thatâs thousands of tons of fresh fruit lostâfruit that could be turned into delicious, long-lasting products like jam, chutney, or puree.
We believe small-batch preservation is one way to tackle this.
đ§Ē Behind the Jam: What We Learned
Here are a few key things we thought we would share about the process:
1ī¸âŖ Pectin Matters â Pectin is the natural substance in fruit that helps jam âset.â While many use store-bought pectin, we explored fruits like apple, lemon, and orange that can naturally boost pectin content.
2ī¸âŖ The Setting Point â This is when the jam is âdone.â We test it by placing a spoonful on a chilled plate. If it wrinkles when pushed, itâs ready to jar.
3ī¸âŖ Sterilizing Jars â Crucial for shelf life and safety. We boil our jars and lids for 10 minutes after washing them thoroughly with hot, soapy water.
4ī¸âŖ Temperature Before Bottling â Letting the jam cool to near room temperature before bottling helps avoid condensation under the lid, which can reduce shelf life.
5ī¸âŖ Bonus Tip: The Splatter Rage â As the mango thickens into jam, it starts to splatter sticky hot lava in every direction. To avoid burns (and cleaning nightmares), we recommend using a deep, heavy-bottomed pot to contain the chaos.
đĻ Todayâs Batch:
We bottled this test batch in 200g and 400g jars.
Next up: naming the product, designing the label, and getting regulatory approvals.
But since mango season wonât last forever, weâre doing a limited run of made-to-order jars for anyone eager to taste our very first jam.
