Chili con carne alert 🌶️
Ingredients:
- 2 cups of rice + 4 cups of water + a pinch of salt
- 1 red bell pepper, 2 large onions, 3 cloves of garlic, 2 fresh tomatoes
- 2 cans of red beans or mixed beans
- 1 small can of corn
- Chili peppers, chili powder, Tabasco or combination, to taste, (smoked) paprika
- 1 kg of thinly sliced beef filet, cut into pieces like shawarma
- 1 finger of dark chocolate
- 1 cup of espresso coffee
- Cooking fat
- Salt, pepper, cumin, coriander, to taste
- Sour cream + 1 lime
Preparation:
- Heat cooking fat in a pan + sauté chopped onions and garlic until translucent
- Turn up the heat to high and add the meat + season with salt, pepper, chili, and paprika
- Cover with tomatoes and beans, add coffee and chocolate + mix
- Let it simmer on low heat for at least 2 hours; stir regularly
- Towards the end, add corn and adjust seasoning with chili to taste
- Mix sour cream with lime juice and a pinch of salt to use as garnish, sprinkle with fresh herbs on top
Tips:
- Better made in advance; can be reheated the next day for even more flavor
- Ideal to "bake" the chili in the oven before serving: transfer to an ovenproof dish (or keep it in the pot), and bake at 150-160 degrees Celsius for another hour or two until a crust forms
- Add chili/Tabasco towards the end until it reaches the desired level of spiciness
- Can also be served with tortillas
