High in protein, healthy and gluten-free bread 🌱🍞
Here’s a delicious and protein-packed bread I made. Using coral lentils, water, psyllium husk, and a hint of baking soda, topped with seeds for a delightful crunch. It’s perfect for a nutritious snack, I love pairing it with soft-boiled eggs, cottage cheese, and avocado. You can also dip it in a warm autumn soup. An easy and tasty way to boost your protein intake while adding variety to your diet!
Ingredients:
* 200 grams corail lentils
* 120 milliliters water (adjust as needed)
* 10 grams psyllium husk powder
* 2 grams baking soda (about half a teaspoon)
* Mix of nuts and/or seeds (for topping
Instructions:
Soak the coral lentils for a few hours, then drain and rinse well. Blend them with 120ml of water until smooth.
Add psyllium husk, and baking soda, and mix until you get a dough-like consistency. Add more water if the mixture is too thick.
Pour into a bread/cake mold. Sprinkle seeds on top.
Bake at 180°C for about 40-50 minutes or until firm and golden. You know the trick with the knife right?
Let cool before slicing. Enjoy !!
PS: It freezes ok, I just eat it back in a pan once it’s defrosted again.
