**Description**
Native to Southeast Asia, Indian Pokeweed is naturalized in Europe and North America due to its historical use as a food source. This species differs from the American pokeweed in the following characteristics:
- 8 stamens (instead of 10)
- 8 separate carpels (instead of 10 coalescent carpels forming a berry at maturity)

**Uses**
The young shoots and fruits are edible, which is why Van Houtte named it *esculenta*. The juice of the fruits was historically used as a food dye, for example, to color low-quality wine.

🌿 **Sustainable Living Philosophy** 🌿

Consuming all edible parts of the animals we harvest is our natural responsibility. In nature, there is no waste; everything is part of a cycle, and we are part of that cycle too. 🌱

🍤 Shrimp shells are often seen as waste, but they can actually be a nutritious and delicious snack. By utilizing them, we prevent waste and fulfill our responsibility to nature.

In doing so, we protect the environment and create healthy and tasty alternatives. 🌍

This aligns with the mission and vision of **Ashure ASBL** and our project **"Les potages de Bruxelles"**, where we focus on creating sustainable, zero-waste, and nutritious food solutions for everyone.

We’re excited to share our successful test phase for Souvage! 🌿🥣

📸 Stages:
1. Harvesting
2. Organizing/planning the plants
3. Washing
4. First cooking
5. Addition of brewed burning herbs & final situation before jarring
6. Products in jars at the farm for workers

Next, we’re creating 10 recipes for 10 months with 30% wild plants and 70% local crops. 🌱

Our products are now gluten-free, vegan, organic, anti-waste, circular, and ethical. 🌿🌍

Using returnable jars, we aim to have our first labeled product by the end of August.

We hope you'll try our products soon and enjoy them weekly for their rejuvenating, naturopathic benefits. 🌿✨

I hope you're all doing well! I wanted to share that I’ll be stepping back from Instagram for a while to focus on an exciting new commitment: developing "Les Potages de Bruxelles." This initiative aims to create good food locally and promote sustainable living.
